apple & fig bircher muesli

Creamy, fresh and sweet. This is one of our go-to breakfasts. Grated apple and fresh figs, mixed with rolled oats, seeds/nuts, yoghurt and almond milk, soaked overnight.


This is a delicious and nutritious breakfast, great to start your day with. Say good-bye to sugary breakfast cereal and hello to a healthy, sugar-free and filling breakfast.





WHAT IS A BIRCHER MUESLI?

It is the original overnight oats.

The name (originated in Switzerland) goes back to the early 1900s and was created by a Swiss doctor called Maximilian Bircher - Benner. He developed Bircher muesli for his patients as a way to include more raw fruit into their diets.


The original recipe of fruit to oats ration apparently was just one tablespoon of oats mixed with two grated apples. For me, more oats please.





THIS BREAKFAST IS
  • filling

  • no rushed breakfast in the morning

  • minimal effort required

  • no cooking involved

  • made in a travel container or jar, this makes a perfect grab & go breakfast




ALTERNATIVE OPTIONS
  • replace half the milk with sugar-free apple juice

  • add dried fruit such as cranberries or raisins for additional sweetness

  • if you don't have yoghurt, you can make it without. It still tastes good, just a little bit less creamy.

  • replace the apple with grated pear

  • serve with your favourite toppings

  • for gluten-free version make sure to use a gluten-free certified oats

  • for nut-free version use a nut-free milk and replace the nuts with seeds or dried fruit

  • replace the figs with berries

APPLE & FIG BIRCHER MUESLI

Serves: 2

Time: 5 min, plus overnight soaking or minimum1 hour



INGREDIENTS

FOR THE BIRCHER

  • 80g whole rolled oats, gluten-free if required

  • 1 apple, grated

  • 2 tbsp non-diary Greek yoghurt, unsweetened

  • ½ tsp ground cinnamon

  • 2 tbsp pistachio nuts or nuts/seeds of choice

  • pinch of salt

  • ½ - 1 cup non-dairy milk, or milk of choice (depending how runny you like your oats)

  • 1 heaped tbsp fresh pomegranate seeds (optional)


TO SERVE

  • 2 fresh figs, roughly chopped

  • a drizzle of vegan honey (optional)

  • hemp seeds (optional)

  • crunchy homemade granola (optional)



INSTRUCTIONS
  1. Add all the Bircher ingredients into a mixing bowl, cover and let it sit overnight in the fridge.

  2. In the morning, add more milk if you like and divide between two bowls or jars.

  3. Top with fresh figs and hemp seeds or crunchy granola and drizzle with vegan honey (optional)
