apple pie jaffle

It had been years since I have had or even thought of Jaffles. Last week I paged trough a food magazine and one of the recipes was a cheesy, meaty Jaffle. Given my love for a Jaffle in the past this inspired me to create a vegan Jaffle.


Where I grew up Jaffles were traditionally filled with a lot of cheese and mince, but with so many exciting ideas running through my mind why not use any filling your heart (or stomach) desires. Ideas for fillings are basically only limited by your imagination.


The past few days I have tried a few different fillings, but am so excited to share this sweet version first.



What are Jaffles?


Jaffles are basically a generously filled toasted sandwich, toasted in a specific clamp-able metal skillet (best toasted on a gas burner or open flame) which gives it its distinctive flying-saucer like shape.


A little bit of history: The Jaffle iron was invented in 1949 and was a very sought-after household item in the early 1950s. If you have tried one you can totally understand why it was so popular.



This is one of those situations where I personally prefer the Jaffle on the darker side and more crispy.

Who is with me?



These jaffles are filled with a delicious apple-pie filling and rolled in a cinnamon sugar as soon as it is taken off out of the jaffle iron. Still hot, the sugar melts into the bread and absorbs that delicious cinnamon sweetness.


This is so easy to make and definitely a cheats dessert if you are short on time or don't have any pastry available to make a proper apple pie. Just imagine serving this with a dollop of coconut cream or vanilla ice cream.....


I have to be honesty though my wonderful Mom made this delicious filing so I can't take full credit for this recipe! Thanks Mom!!



Serving suggestions


  • With whipped coconut cream

  • A dollop of plain or vanilla non-dairy yoghurt

  • A scoop of vanilla ice cream

  • or just as it is!



Alternative options


  • For a gluten-free version, use gluten-free bread.

  • For refined-sugar free version, substitute the sugar with coconut sugar, xylitol, maple syrup or date syrup and dust with cinnamon only.



 


APPLE PIE JAFFLES


(Vegan, gluten-free and refined-sugar free option)


A sweet twist on the traditional jaffle. This is an easy and inexpensive dessert, the perfect cheats dessert really. This recipe combines two classics: Jaffles & apple pie

Filled with a sweet apple pie filling and dipped in cinnamon-sugar.



Makes 2 jaffles

Filling total time: 30 min

Cooking time per jaffle: 6 - 8 min, depending how you like your bread toasted.



You will need:

  • A jaffle iron

  • A gas burner or gas stove for cooking



INGREDIENTS:


For the filling:

  • 2 large apples, cut into small cubes

  • 1 ½ tbsp sugar or maple syrup for refined sugar-free

  • Pinch of salt (to balance the flavours)

  • ½ tsp ground cinnamon

  • 2 wholes cloves

  • 1/3 cup water

  • 1 tbsp lemon zest

  • 1 tbsp raisins


For the jaffle:

  • 4 slices fresh bread of your choice. I used a soft white bread.

  • Coconut oil or vegan butter, to prevent sticking to the iron and for toasting

  • Cinnamon & sugar mix (omit sugar for refined sugar-free option)



INSTRUCTIONS


To make the filling:

  1. Add all the filling ingredients into a small saucepan and cook with the lid on low until soft. Mine took about 10 min. Do not overcook as the apples as we want the apples to keep their shape.

  2. Remove from the heat and remove the cloves.

  3. Set aside.



For the cinnamon sugar:

  1. In a shallow plate mix ground cinnamon and sugar together and set aside.



To make the Jaffles:

  1. Take 2 slices of bread and spread coconut oil on each slice.

  2. Transfer one slice into the Jaffle iron with the coconut oil side facing the outsides of iron/pan. Spoon a couple of spoonful’s of the filling into the middle of the bread, but make sure to leave space around the filling. Now cover with the second slice of bread, but again make sure the side with the coconut oil is facing the Jaffle iron side.

  3. Close the Jaffle iron and cut off any excess bread.

  4. On a gas flame, place the jaffle iron onto the flame and toast the Jaffle about 3 minute* on each side or until golden and toasted to your liking. Carefully open the Jaffle iron to release the bread. Be careful not to burn your hands.

  5. Roll and cover the hot jaffle with the cinnamon sugar on both sides. Remove from the cinnamon sugar and set aside until ready to be served.

  6. Repeat to make the next Jaffle.

  7. Best enjoyed whilst still warm.


 

NOTES


* The first jaffle always takes longer to as the iron still needs to heat up.
