Avocado & Pesto Toast

The creamy, rich avocado with homemade pesto on sourdough toast makes a wonder lunch, breakfast or brunch.
This is such a simple meal, but sometimes simple is best, right? I suppose this is more an inspiration rather than a recipe. Either way I hope you still enjoy!
YOU WILL NEED
A few slices of good sourdough bread, or bread of choice
A ripe avocado
Homemade pesto (Below are a few recipes)
Sea salt & black pepper
Chilli flakes or a chilli oil
Sesame seeds
ADDITIONAL TO ADD
Tofu scramble
Oven-roasted tomatoes
Hummus
Replace the pesto with a vegan tapenade

INGREDIENTS
1 or 2 slices of sourdough bread, toasted
1/2 ripe avocado, sliced or mashed
1 -2 tbsp homemade or store-bought pesto
sea salt & black pepper, to taste
chilli flakes or a chilli oil (optional)
1 tsp black or white sesame seeds (optional)
INSTRUCTIONS
Spread the pesto on your warm toast. Top with the sliced or mashed avocado
Finish with sea salt, black pepper, sesame seeds and chilli flakes (optional)
Enjoy!
