Banana Bread Baked Oats

A banana bread inspired baked oats. Healthy, delicious, finished with an indulgent, yet healthy peanut butter "frosting". It is soo good!
TO MAKE THIS YOU WILL NEED
rolled oats
a ripe banana
ground cinnamon
baking powder
almond milk or milk of choice
a thick, Greek-style plantbased yoghurt
peanut butter, unsweetened and without any added oils.
pure maple syrup (optional), not maple flavoured syrup
THE "BANANA BREAD"
For this breakfast I like a bit a texture in the oats.
To do this I add half the rolled oats and the rest of the ingredients for the oats to a high-speed blender and blend for a few seconds until smooth. Add the rest of rolled oats give a quick mix, before pouring into the oven-proof ramekin.
If you prefer a fine baked oats texture you can add all the rolled oats to the blender.
BAKING TIME
The baking time will depend on the shape and size of the bowl you are using, but also remember that ovens vary. Check after 15 minutes if the oats is cooked to your liking. If after 18 minutes the oats is not cooked enough, simply leave it in for another 1 - 2 minutes.
THE "FROSTING"
This is probably the best part of this breakfast. It is easy to make and also healthy! What is not to love.
To make the frosting all your need to do is mix thick, Greek-style yoghurt and a good peanut butter. If you prefer it sweet, you can add a bit of maple syrup.
OPTIONS AND ADD-INS
Add a few chopped pecan nuts to the batter, after it has been blended.
For a gluten-free version, make sure to use a gluten-free certified oats.
If you are allergic to peanuts, you can replace the peanut butter with almond butter or sunflower seed butter.
To finish place a few additional banana slices on top of the frosting and sprinkle with a few cacao nibs.

Serves: 1
Time: 25 minutes
INGREDIENTS
FOR THE BAKED OATS
1 small ripe banana
40g rolled oats (half to be blended)
1/2 tsp baking powder
1/2 tsp ground cinnamon
80ml almond milk or milk of choice
a pinch of sea salt (optional, but recommended)
FOR THE FROSTING
1 heaped tbsp thick, Greek-style vegan yoghurt, unsweetened
1 heaped teaspoon peanut butter
1 tsp maple syrup (optional)
TO SERVE (optional)
a few banana slices
cacao nibs
a drizzle maple syrup
INSTRUCTIONS
Preheat your oven to 180C or 160C fan.
Add half the oats (20g), and the rest of the baked oats ingredients into a high-speed blender and blend for a few seconds, until smooth.
Add the rest of the rolled oats to the blended mixture and give a stir (don't blend).
Pour into an oven-proof ramekin.
Bake for about 18 - 20 minutes - adjust baking time depending on how cooked you like your oats.
Once cooked, remove from the oven and let it cool for a few minutes.
Next, make the frosting by mixing the ingredients until well combined.
Spoon the frosting on top of the warm oats
Optional: Add a few banana slices, a few cacao nibs and a drizzle of maple syrup
