Black Forest Baked Oats

Cherries, chocolate, creamy yoghurt and a soft cake-batterlike centre. This healthy breakfast is inspired by the delicious flavours of a black forest cake.


I have so many baked oats recipes I still want to share, but this one is one of my favourite.

Using blended oats gives this an cake batter like texture, which takes this to the next level.

  • vegan

  • gluten-free (option)

  • and nut-free (option)

THE INGREDIENTS

OAT FLOUR

If you don't have oat flour, simple blend rolled oats in a high-speed blender into a floury consistency.

You can also use rolled oats, but the texture will be different.

For gluten-free option make sure to use a gluten-free certified oats.



CACAO POWDER

Preferably a raw, organic and unsweetened cacao.



CHERRIES

I prefer using frozen cherries as they are softer and juicier than fresh cherries once they are defrosted.

Frozen dark cherries are my preferred choice.



BANANA

Mashed bananas are my go-to to sweeten my oats. I do not like adding table sugar or processed sugars to my breakfasts. You can however use any sweetener of choice.

Maple, date or agave syrup are good options.



ALMOND OR OAT MILK

I always have almond and oat milk in my fridge and are my preferred options, you can however use any milk of choice. For nut-free version make sure to use a nut-free milk.



VEGAN YOGHURT (optional but recommended)

Adding a dollop of yoghurt to the centre adds a wonderfully rich and creamy surprise. For nut-free version make sure to use a nut-free yoghurt.



BAKING POWDER

This helps give that fluffy texture.



PINCH OF SALT

I always recommend adding a pinch of salt as it balances the flavours and it actually enhances the chocolate flavour.



ALTERNATIVE PREP OPTION

If you are using whole rolled oats you can also add all the ingredients (apart from the yoghurt and cherries) into a high-speed blender and blend until smooth.


If you prefer your oats a bit more cooked, simply keep it in the oven for another 2 - 3 min.

I personally love that soft, runny centre.

BLACK FOREST BAKED OATS


Cherries, chocolate and a creamy yoghurt centre. This healthy breakfast is inspired by the delicious flavours of a black forest cake.


Serves 1

Prep time: 5 min

Baking time: 15 min



INGREDIENTS

  • 40 g oat flour

  • 1 tbsp cacao powder, unsweetened

  • 1/2 mashed banana

  • 1/2 tsp baking powder

  • pinch salt

  • 75ml almond or oat milk, or milk of choice

  • 5-6 frozen cherries, plus more to serve

  • dollop of plant-based yoghurt



INSTRUCTIONS

  1. Preheat the oven to 180C

  2. Mix the oat flour, cacao, mashed banana, baking powder, salt and oat milk until well combined.

  3. Pour 2/3 of the mixture into an oven-proof ramekin or bowl.

  4. Add a dollop of yoghurt and 5 - 6 frozen cherries.

  5. Cover with the rest of the mixture and bake for 15 min.

  6. If you prefer you oats a bit more set, bake for another 2-3 minutes.

  7. To serve, dust with cacao and more yoghurt and cherries if you wish.
