black rice pudding


A tropical, coconutty and rich pudding, made with coconut milk, coconut sugar and the forbidden rice. Maybe not the traditional Christmas dessert, but one for friends and family celebrating Christmas in the Southern Hemisphere to enjoy in the heat.


Although I am currently sitting in the cold, one can only dream of hot weather and summery desserts.




I discovered that I like rice pudding many moons ago in London, when I bought what I thought at that point was a Muller yoghurt pot, which turned out to be a rice pudding. Imagine the surprise of that first bite when the texture was not at all what I had expected. Thankfully I did not mind it and it did not go to waste - It just meant that I had pudding for breakfast.


Okay now all I can think of is that Muller advert with the bear dancing and singing "Rice, rice baby!"

(basically a Muller version of "Ice, ice baby" by Vanilla Ice).

If you have seen the Muller advert you will know what I am talking about and will probably have that vision in your mind for the next hour or so. You are welcome.


Anyway,


This 3 -ingredient rice pudding has tropical flavours and sweetened with a bit of coconut sugar.



THIS PUDDING IS ALSO
  • vegan

  • gluten-free

  • nut-free

  • not too sweet

  • rich

  • creamy

  • coconutty

  • takes minimal effort to make



WHAT IS BLACK RICE

Black rice is also known as the forbidden rice. It is a wild rice, nearly black in colour due to its high antioxidants level.

It has a nuttier flavour that most rice varieties and is especially popular to use in Desserts in South East Asia.


Black rice is rich in iron and also has a higher protein content than brown rice.

Black rice can be enjoyed on a gluten-free diet as it is naturally gluten-free.



THE 3 INGREDIENTS YOU WILL NEED

BLACK RICE

Some brands might require pre-soaking therefore check the packaging beforehand.


COCONUT MILK

I highly recommend using a full-fat coconut milk.


COCONUT SUGAR

Or sweetener of choice such as maple syrup.

Coconut sugar adds a rich, caramel flavour.



AND OPTIONAL TO SERVE:
  • Toasted coconut flakes

  • Passionfruit pulp

  • Mango pieces or banana slices

  • more coconut milk or coconut yoghurt





BLACK RICE PUDDING


A tropical, coconutty and rich pudding, made with only 3 ingredients.


Serves: 2 - 3

Time: 60min



INGREDIENTS
  • 100g black rice, rinsed (make sure it doesn't need to be pre-soaked)

  • 200ml full-fat canned coconut milk

  • 250ml water (or more if needed)

  • pinch of salt

  • 1 - 2 tbsp coconut sugar (depending on sweetness level you prefer)


INSTRUCTIONS
  1. Bring the rice, water, coconut milk and salt to boil. Boil on low for 45 - 50 min with the lid ajar.

  2. Stir every now and then to make sure it is not burning and has enough liquid. Add more liquid if you prefer yours a bit runnier.

  3. After 45 - 50 min, turn off the heat and stir in the coconut sugar.

  4. Cover with a lid and let it sit for 10min.

  5. Serve with toasted coconut flakes, passion fruit pulp and a drizzle of coconut milk if desired.
