blackberry buckwheat porridge

A smooth, creamy and nutty breakfast, with blackberry flavours.

This is a new love (probably more an obsession) of mine. I love the texture of the buckwheat and the fruity flavour from the blackberries. Not only is this a raw breakfast, but it is also refined sugar-free.


This is a great summer breakfast as it can be made with frozen fruit to make it extra cold. But this can also be enjoyed as a hot porridge on colder days.




WHAT IS BUCKWHEAT?


Despite its name, buckwheat is not actually a wheat, but a seed from a flowering fruit.

It's naturally gluten-free, very high in nutrients and has even more fiber than oats.

It is also an excellent source of plant-based protein.



TO MAKE THIS YOU NEED

  • raw buckwheat groats

  • frozen banana

  • pinch of salt

  • almond milk

  • fresh/frozen blackberries

  • date syrup (optional)

  • and a high-speed blender


ALTERNATIVE OPTIONS

  • Replace the blackberries with cherries, strawberries, blueberries or raspberries

  • Use a fresh banana instead of frozen banana

  • For a nut-free option, use a nut-free milk.

  • Leave out the milk if you prefer your porridge a bit thicker.

  • If you don't have date syrup, you can maple syrup. Or alternatively you can use dates, or omit completely



FAVOURITE TOPPINGS


I love adding (homemade) granola, cacao nibs and fresh fruit.

Nut butters or tahini will taste wonderful too.





A WARMING BREAKFAST


As mentioned, this can also be eaten as a warm breakfast. Simply cook the porridge on low and add more liquid as needed. Use a fresh banana or no if you are eating it warm.

BLACKBERRY BUCKWHEAT PORRIDGE

(VG, GF)



A sweet, nutty and creamy porridge! Use frozen fruit for a delicious cool summer breakfast.


Serves: 1

Prep time: 5 min, plus overnight soaking



INGREDIENTS
  • 1/2 cup raw buckwheat groats, soaked overnight

  • 30ml almond milk (of milk of choice), or to liking (optional)

  • 1/2 frozen banana

  • 6 - 8 blackberries (fresh or frozen)

  • 1 tbsp date or agave syrup (optional)

  • 1 tbsp chia seeds (optional)

  • pinch of salt



INSTRUCTIONS
  1. Drain and rinse the soaked buckwheat.

  2. Add all the ingredients to a high-speed blender and blend until smooth.

  3. Serve immediately with fresh blackberries/ fruit and granola.
