Blackberry Overnight Oats

A bit of tartness combined with sweetness and hints of vanilla. This creamy oats is so dreamy and delicious.
Add a few mashed blueberries, swirled with the creamy oats and you have yourself a beautiful breakfast.
BLACKBERRIES
Not only do the berries make the oats pretty, but they are also good for your skin.
Blackberries are classified as a superfood and are packed with vitamins, fiber, minerals and antioxidants. They are also low in carbs, fat and calories.
NO BLACKBERRIES
If you don't have blackberries, you can use other berries such as blueberries or raspberries.
OVERNIGHT OATS
Overnight oats are a great time saver. Make two or three batches at the same time and you have breakfasts sorted for the next two or three days.
If you have never made overnight oats I am happy to tell you it's as easy as mixing your raw oat flakes with your milk of choice, add a few ingredients such as fruit, nuts or spices for flavour and letting it sit overnight in the fridge. No cooking is required. Simple. Easy. And healthy.
If you like a smooth pudding like texture you can use oat flour or blend the oats.
WARM IT UP IF YOU PREFER A WARM OATS.
Overnight oatmeal is typically served cold, but you can definitely eat them warm. Just place them in the microwave for a minute or heat on low in a small pot.
MAKE IT PRETTY
Mash two or three blackberries with a drizzle of maple syrup in the bottom of your bowl or glass before pouring the oats into the bowl. This step is completely optional, but it looks really beautiful when the colours from the berries mix with the oats as you eat it. Who doesn't like a pretty breakfast.
TO MAKE THIS YOU WILL NEED
old fashioned rolled oats., not quick oats. Make sure to use a gluten-free certified oats if needed
oat milk or any milk of choice
plant yoghurt to make it extra creamy, I use a brand called Oatly, which is an oat-based yoghurt
a pinch of salt - to balance the flavours
add a hint of vanilla by adding either vanilla extract or a vanilla protein powder
a bit of orange or lemon zest
a sweetener of choice: mashed banana/ maple syrup/ agave syrup/ grated apple
and a handful fresh blackberries
ADDITIONAL ADD-INS
Add a tablespoon chia seeds to increase the fiber. It will help you feel fuller for longer.
or a tablespoon crushed flaxseeds.
Add seeds, such as sunflower or pumpkin seeds, for extra nutrients and crunch
Add a teaspoon almond or peanut butter for a PB&J flavour combo.
OAT MILK
If you add either protein powder, chia seeds or flaxseeds you will most likely need to add a bit more oat milk.
Adjust the amount of oat milk until the desired consistency is achieved. Remember you can always add more oat milk in the morning before serving.

Time: 10 minutes, plus overnight soaking
Serves: 1
INGREDIENTS
FOR THE OVERNIGHT OATS
1/2 cup old fashioned rolled oats, not quick oats
1/2 cup oat or almond milk, or as much as needed
2 - 3 tbsp plant yoghurt, I used an oat-based yoghurt
a pinch of salt
1/2 tsp vanilla extract or 1/2 scoop vanilla protein powder
orange or lemon zest (optional)
sweetener of choice: mashed banana/ maple syrup/ agave syrup/ grated apple
small handful blackberries (reserve 2 or 3 for later), cut in half
ADDITIONAL
1 tbsp chia seeds or linseeds
INSTRUCTIONS
FOR THE OVERNIGHT OATS
Add all the overnight oats into bowl or jar. Cover or seal with a lid and let it sit in the fridge overnight.
TO SERVE
Mash 2 or 3 blackberries with a drizzle of maple syrup in the bottom of your bowl or glass.
Stir the oats to see if more oat milk is needed, before spooning the oats over the mashed blackberries
Add a few blackberry halves on top if you like.
