Blended Chocolate Chia Pudding

A creamy, high-protein chocolatey chia pudding, blended until smooth and served with fresh berries.
Whether you are looking to cut back on sugar or not, this makes a delicious and satisfying dessert or breakfast, which is also healthy and nutritious.
TO BLEND OR NOT TO BLEND
I know a lot of people don't like the texture of chia pudding, which is why blending is a great option. None of the tapioca like texture, however still all the nutrients.
Blending is not necessary, so do as you wish, but you will have to replace the dates with a liquid sweetener or omit completely and let the berries bring the sweetness. Both are good options.
LET'S TALK CONSISTENCY
Adjust the amount of liquid you add to get the consistency you prefer. I prefer mine thick, but some might prefer it a bit runnier.
I also love mine extra chocolaty, so I often add more cacao powder for that intense chocolate flavour.
If you are like me and add more cacao, you might have to add more almond milk as the cacao also absorbs a lot of liquid.
PROTEIN POWDER
I love adding a scoop of chocolate protein powder to boost the nutrition. This is however optional. You could either add more cacao powder or omit and just add less liquid.
Again, this is up to you.
BERRIES
I love using fresh berries, but you can also use frozen berries or replace them for other fruit such as banana slices or peaches.
ADDITIONAL
Sprinkle with toasted nuts or a little bit of granola
Swap the almond butter for peanut butter

BLENDED CHOCOLATE CHIA PUDDING

TIME: 10 minutes, plus setting time
SERVES 1- 2
INGREDIENTS
3 tbsp Chia Seeds
1 cup Almond Milk
1 tbsp Cacao Powder
1 scoop Protein Powder
1 tsp maca powder
2 Medjool dates
1 tbsp Almond Butter
a pinch of salt
INSTRUCTIONS
Add all the ingredients to a high-speed blender and blend until completely smooth.
Pour into 1 or 2 jars/ bowls.
Let sit in the fridge for about 30 minutes before serving with fresh berries and cacao nibs.
