blended chocolate & orange baked oats

So gooey, chocolaty with bursts of orange flavours. What better way to start a day on a cold winters morning than with this indulgent, comforting, yet healthy chocolate orange baked oats.
This easy blended baked oats is made with only a few ingredients and is a healthy, decadent breakfast that will make you feel like you are eating cake. Only much healthier!
Similar to the traditional baked oats, these are basically the same ingredients, just blended up to give a cake batter like texture.
The blended baked oat craze has been circulating on Instagram for a while now and let me tell you it is worth the hype! If you have not made it yet, you are missing out!
TO MAKE THIS YOU WILL NEED
rolled oats, for a gluten-free option use gluten-free certified oats
organic cacao powder, unsweetened
dark chocolate (optional for real indulgence, but omit if you want the breakfast to be sugar-free)
an orange
a ripe banana
maple syrup, or any other liquid sweetener (optional)
almond milk or milk of choice
baking powder (optional)
sea salt

HOW TO MAKE A BLENDED OATS
Option one is to simply add all the ingredients into a highspeed blender and blend until a cake-like texture or until a texture to your liking.
Transfer into a ramekin and bake in the oven for a few minutes.
Easy!
IF YOU DON'T HAVE A BLENDER, NOT TO WORRY
You can simply mix the ingredients together without blending, the texture will however be different.
Alternatively you can use oat flour and mix all together using a mixing bowl and a spoon before transferring it into the ramekin.

Serves: 1 serving
Prep time: 5 min
Cooking time: 15 - 18 min
Total time: Less than 25min
INGREDIENTS
45g rolled oats or oat flour (if not using a blender)
5g cacao powder, plus more for dusting
1 small banana mashed (about 40g)
1 block of dark chocolate (optional)
pinch of sea salt
1 tbsp maple syrup (optional)
1/2 tsp baking powder
segments from 1/2 orange
85ml liquid - juice from half an orange and top up with almond milk
cacao nibs to serve
orange zest to serve, optional but highly recommended to enhance the orange flavour.
INSTRUCTIONS
Preheat the oven to 180C
OPTION 1:
Add all except for the orange segments into a high-speed blender and blend until a batter-like texture or to your liking.
Transfer half the mixture into an oven-proof ramekin. Add the orange segments and the block of chocolate (if using) and cover with the rest of the oat mixture.
Bake in the oven for 15 - 18min.
Sprinkle with cacao nibs, dust with cacao powder and orange zest (optional) and enjoy!
OPTION 2 if you don't have a blender:
You can use oat flour to get the same cake-batter like consistency or use whole rolled oats as it is, but the texture will be different.
Mix all the ingredients together and transfer into an oven-proof ramekin. If you are adding the chocolate, first pour half the mixture into the ramekin. add the chocolate block and cover with the rest of the oat mixture.
Bake in the oven for 15 - 18min.
Sprinkle with cacao nibs, dust with cacao powder and orange zest (optional) and enjoy!
NOTE!
If you don't want to add banana, you can replace it with apple sauce or omit and add a bit more liquid.
