Blueberry & Banana Oats

Banana and blueberry flavoured oats. - sweet and fruity, warming oats with bursts of juicy, freshness from the blueberries.


This is a go-to breakfast for me. I always keep a bag of frozen berries on the freezer and I always have bananas in my fruit bowl. The burst blueberries add such beautiful colour, you can't help but love this breakfast and the flavour combination!

TO MAKE THIS BREAKFAST YOU WILL NEED
  • old fashioned rolled oats, gluten-free if needed

  • frozen blueberries

  • a ripe banana

  • almond milk or milk of choice

  • a pinch of salt to balance the flavours

  • and to serve: a dollop of peanut butter. Totally delicious, but optional.



ALTERNATIVE ADD-INS
  • Stir in a tablespoon plain yoghurt to make it extra creamy

  • Add protein by adding hempseeds, nuts or plantbased protein powder

  • Add a tbsp toasted coconut flakes or desiccated coconut - absolutely divine!

  • if you like your breakfast a bit sweeter add a drizzle maple syrup or honey.

BLUEBERRIES

Half the frozen blueberries are added to the oats whilst it's cooking. The cooking will soften the blueberries. They will burst and add a gorgeous flavour and colour to the oats.

The other half of the blueberries is served on top of the cooked oats. You can defrost them or slightly heat them in a saucepan for a few minutes with a drizzle of maple syrup.



BANANA

Half the banana is mashed and added to the oats whilst it's cooking. The other half is sliced into discs and served with the oats.

Adding the mashed banana during the last few minutes of the cooking process helps add extra creaminess and sweetness.

BLUEBERRY & BANANA OATS

TIME: 15 minutes

SERVES 2



INGREDIENTS

  • 1 cup old fashioned rolled oats, gluten-free if needed

  • 1 cup frozen blueberries

  • 1 large banana, half mashed and half sliced

  • 2 cups almond milk or water, or add more as needed

  • a pinch of salt

  • 1 tbsp peanut butter (optional)

  • a drizzle of maple syrup (optional)



INSTRUCTIONS

  1. Bring water to boil in a small pot.

  2. Add the oats and the salt. Stir and bring to boil.

  3. Reduce the heat and cook on low heat with a lid, ajar. Cook for 8 - 10 minutes or as per packaging instructions. Add more liquid as needed.

  4. For the last 3 minutes of cooking time add half the frozen blueberries and the mashed banana.

  5. Divide between 2 bowls. Top with the rest of the blueberries (defrost if desired), banana slices and peanut butter.

  6. If you wish, finish with a drizzle of maple syrup and a splash of almond milk.

  7. Serve immediately
