Bounty Chia Pudding

A super easy and healthy coconut & chocolate dessert made with only a few ingredients.

Sweet enough to curb the bounty bar cravings, yet it's good for the gut, satisfying and loaded with protein, fiber and omega-3s. A great dessert, breakfast or afternoon pick-me-up.

Bounty Bar Chia Pudding


WHAT IS CHIA PUDDING

Chia pudding is made with chia seeds mixed with milk of choice (and sweetener of choice) and let set for a hour or so until a tapioca or gel-like texture. It should be nice and thick and not liquidy.


Chia seeds are full of important nutrients such as rich in antioxidants, protein and calcium and are an excellent source of omage-3 fatty acids.


Almost all the carbs in chia seeds are fiber, which means you will stay fuller for longer and will aid keeping your gut healthy.


Chia pudding is a good meal-prep option as it can keeps for about 4 days in the fridge,

TIPS TO MAKING A GOOD CHIA PUDDING

  • The texture should be nice and thick and not liquidy. If the texture is too soft or runny, add more chia seeds and let it sit for another 30 min.

  • Give the chia pudding a good stir about 5 minutes after your initially mix together. This will help break up any clumps. Let it sit for 2 - 3 hours before serving.

  • Using plant-based milks such as almond, cashew or coconut milk will give the pudding a creamy consistency.



ALTERNATIVE OPTIONS

  • If you prefer a smooth pudding texture you can blend the mixture in a high-speed blender until smooth.

  • For sweetness, I love using maple syrup or agave syrup, but you can use any sweetener of choice.

  • To enhance the coconut flavour I recommend using coconut milk (not from a can) or adding coconut flour in the mixture.

HOW TO MAKE THIS

  • Mix the coconut and chocolate mixtures in separate bowls. Stir well and let them set for 2 - 3 hours or overnight.

  • When ready to serve, spoon layers of the mixtures (divide between 2 glasses).

  • I recommend sprinkling some desiccated coconut flakes between the layers.

  • Finish with a dollop of coconut yoghurt (optional) and serve with more coconut flakes and cacao nibs or chocolate chips.

Serves: 1

Time: 5 min, plus setting time



INGREDIENTS


FOR THE COCONUT LAYER

  • 1 1/2 tbsp chia seeds

  • half cup almond milk/ coconut milk (not canned coconut milk)

  • pinch of salt

  • 1 1/2 tbsp maple syrup

  • 1 heaped tbsp coconut flour or desiccated coconut flakes

  • 1 tsp vanilla extract


FOR THE CHOCOLATE LAYER

  • 1 1/2 tbsp chia seeds

  • half cup coconut milk/ almond milk (not canned coconut milk)

  • pinch of salt

  • 1 1/2 tbsp maple syrup

  • 1 heaped tbsp cacao powder

  • Chocolate shavings or chocolate chips (optional)


OPTIONAL TO SERVE

  • chocolate shavings or mini chocolate chips or cacao nibs

  • coconut or plain yoghurt

  • desiccated coconut to sprinkle between each layer



INSTRUCTIONS

  1. In two separate mixing bowl: mix the all the coconut layer ingredients in one bowl and all the ingredients for the chocolate layer in the other.

  2. Cover the bowls and let the mixtures set in the fridge for 2 - 3 hours before serving.

  3. When ready to serve: divide the mixtures between 2 serving bowls/ jars. I recommend sprinkling desiccated coconut flakes between each layer.

  4. Serve with a dollop of yoghurt, cacao nibs and toasted coconut Enjoy!
