Carlin peas, Cucumber and Tomato Salad

This 10-minute summery salad is a great lunch option or a side dish to a BBQ. Plus, this recipe also happens to be gluten-free, dairy-free, and vegan-friendly, making it the perfect dish for everyone to enjoy!



Carlin peas, Cucumber and Tomato Salad


WHY YOU WILL LOVE THIS SALAD

  • Zing from the lemon juice

This salad can be put together in 10 minutes and to make this


YOU WILL NEED

  • carlin peas or chickpeas, or any legumes of your choice

  • cherry tomatoes

  • cucumber

  • fresh lemon juice

  • red wine vinegar

  • a good extra virgin olive oil

  • sea salt and crushed black pepper

  • fresh herbs such as parsley, basil and/ or oregano

  • spring onion or red onion (optional)

NORMALLY I USE CHICKPEAS


Chickpeas are rich source of nutrients and plant protein.

You can cook your own chickpeas but using canned chickpeas in this salad will save you a lot of time as no cooking is involved.

You can replace the chickpeas with any legumes of your choice. White beans, queen carlin peas or lentils are a great alternative option,


TODAY, I USED


Carlin Peas, also known as black or grey peas.

I believe they are prominently grown in the UK and make a great alternative to chickpeas.

Before today I had not tasted them before. So when I spotted them in our local grocery store last week I bought a jar specifically to try with this salad.

VARIATIONS ADD-INS


  • diced bell peppers

  • kalamata olives

  • vegan feta alternative

  • diced avocado

  • swap the parsley and basil for your herbs of choice

  • cooked, cold pasta to make a pasta salad



SERVE WITH


  • fresh baked bread

  • kebabs and rice or couscous

  • as a side to a Braai/BBQ

  • or on its own



MAKE AHEAD

Make this ahead of time and store it in the fridge. The flavours enhance if the salad sits for a bit before serving.

You can also make a larger portion and store in the an airtight container in the fridge for easy lunches for the next few days.

CARLIN PEAS, TOMATO & CUCUMBER SALAD

Serves 4 - 6 as a side

Time 10 minutes



INGREDIENTS


  • 1 cup cherry tomatoes, halved or quartered

  • 1 cup cucumber, cubed or sliced

  • 2 cups cooked Carlin Peas or chickpeas

  • 1/4 cup fresh basil and parsley, roughly chopped (or herbs of your choice)


DRESSING

  • 2 tbsp extra virgin olive oil

  • 2 - 3 tbsp fresh lemon juice

  • 1 tbsp red wine vinegar

  • 1/2 tsp garlic granules

  • 1/2 tsp salt, adjust to taste

  • 1 tsp oregano

  • crushed black pepper to taste



INSTRUCTIONS


  1. Mix all the ingredients for the dressing together and set aside.

  2. Add the carlin peas, tomatoes and cucumber pieces to a salad bowl.

  3. Drizzle with the salad dressing and add the fresh herbs.

  4. Mix well. Taste and adjust seasoning as needed.

  5. Let it sit for a few minutes before serving.
