Cherry Chocolate Baked Oats

Inspired by a cherry brownie, this gooey Chocolate and Cherry baked oats makes a wonderful weekend breakfast or brunch. It's especially good on a colder day, but nothing stops me making this in summer when it's cherry season.
Gooey, chocolaty baked oats with bursts of sweet cherries. Absolutely delicious!
TO MAKE THIS YOU WILL NEED
Oat flour, gluten-free if required
Fresh or frozen cherries
Cacao powder
Chocolate protein powder
A banana
Almond or hazelnut milk
Baking powder
Linseeds
and a pinch of sea salt
NO OATS FLOUR
You can make your own by blending rolled oats into a flour consistency. You can use either a food processor or high-speed blender.
Alternatively you can use the rolled oats as it is and not blend it into a flour.
HOW LONG DO I NEED TO BAKE THE OATS?
Baking time can be between 20 -25 minutes at 180C or until it's cooked to your liking.
I love under-baking my oats slightly to have a gooey centre (almost like a lava cake) so I prefer baking mine for about 20 minutes. If you do prefer a more cake-like texture throughout simply bake it for a few more minutes or until cooked to your liking. Ovens may vary, so it might be worth checking after 20 minutes and take it from there.
SERVE WITH
Plain or vanilla plantbased yoghurt.
Cacao nibs or chocolate chips (to make it extra indulgent).
Maple syrup if needed.
Additional cherries
ALTERNATIVE OPTIONS
Use rolled oats, instead of oat flour
Replace the cherries with berries, such as strawberries, raspberries or blueberries
Substitute the almond milk for oat milk or any milk of choice
Add a few nuts or other seeds
I prefer mine fruit sweetened only, but you can add an additional sweetener such as maple syrup.

CHOCOLATE CHERRY BAKED OATS

Serves 2 - 3
INGREDIENTS
FOR THE OATS
80g oat flour
1 scoop chocolate protein powder
220ml almond or hazelnut milk
1 tbsp organic cacao powder
a pinch of sea salt
1 tbsp flax seeds
1 mashed banana
1 tsp baking powder
about 50g cherries, halved. plus about 4 or 5 extra for decoration on top.
TO SERVE
2 - 3 tbsp plain or vanilla yoghurt
cacao nibs
additional cherries
maple syrup (optional)
INSTRUCTIONS
Preheat the oven to 180C and prepare an oven-proof baking dish.
Mix all the oats ingredients in a bowl or directly in the baking dish.
Add a few cherries on top. Press them down slightly.
Place in the preheated oven and bake for about 20 - 25 minutes, or until cooked to your liking.
Remove from the oven and let it sit for a few minutes.
Serve with yoghurt, cacao nibs, additional cherries and maple syrup (optional).
