chocolate & berry buckwheat porridge with tahini

Rich, chocolaty creamy buckwheat porridge with a nutty tahini and sweet blueberries.


Raw buckwheat porridge is one of my favourite breakfasts, even in winter. I love eating it cold, topped with fresh fruit and nuts/granola for extra crunch.


It is incredibly easy to make, nutritious and no cooking involved!





WHAT IS BUCKWHEAT


Buckwheat is the seed of a plant which is related to rhubarb and sorrel. Contrary to its name, buckwheat is unrelated to wheat and is gluten-free. It is a good source of high-quality protein and may improve heart health, promote weight loss, and help manage diabetes. Read more about buckwheat here.



RAW BAUCKWHEAT PORRIDGE


It's simply made by soaking raw buckwheat groats overnight, then blended with fruit/ sweetener/ flavours of your choice into a smooth porridge.





TO MAKE THIS YOU WILL NEED
  • raw buckwheat groats

  • cacao powder, preferably organic

  • chocolate protein powder (optional)

  • fresh or frozen banana

  • fresh or frozen blueberries or any berries of your choice such as raspberries, black berries or cherries

  • dates (optional)

  • a good runny tahini paste

  • a healthy chocolate sauce



HOW TO MAKE A HEALTHY CHOCOLATE SAUCE

Mix 1 heaped tbsp cacao powder and 1 tbsp hot water. Mix into a paste. Now add maple syrup or more water until the desired consistency is reached.






CHOCOLATE, BERRY & TAHINI BUCKWHEAT PORRIDGE


(Raw, Gluten-free & Vegan)



It is incredibly easy to make, nutritious and no cooking involved!


Time: 5 min, plus overnight soaking

Serves: 2



INGREDIENTS
  • 1 cup raw buckwheat groats

  • 1 heaped tbsp cacao powder (preferably organic)

  • 1 cup fresh or frozen blueberries, or berries of choice

  • 1 banana, fresh or frozen

  • 2 - 3 soft dates (optional)

  • pinch of salt


TO SERVE

  • 1 tbsp tahini paste

  • healthy chocolate sauce (optional)

  • Cacao nibs

  • Blueberries



INSTRUCTIONS
  1. Soak the raw buckwheat groats in water, overnight.

  2. In the morning, drain and rinse the buckwheat and transfer to a high-speed blender.

  3. Add the rest of the ingredients and blend until smooth and creamy. Add a splash of almond milk (or milk of choice) if required.

  4. Divide the mixture between 2 bowls and enjoy with a generous drizzle of tahini, blueberries and cacao nibs.
