Chocolate-chip Cookie Granola

I have been craving chocolate-chip cookies for a while now and scrolling through my Instagram feed did not help with so many delicious chocolate chip cookie photos posted every day!
Going through my kitchen cupboards I realised I didn't have all the right ingredients to make a batch of cookies so naturally (me being the granola lover that I am) I decided to try making it into a granola. This must have been a beginners luck as the first batch turned out fantastic! So, not the only downside to this is that I can't stop snacking!
Think milk and chocolate-chip cookies, .... this really is dessert for breakfast!

Using only 6 ingredients, this granola is so easy to make and really satisfying. Best enjoyed with almond or macadamia milk!
I love dark chocolate and used a 70% (vegan) dark chocolate for this, but I am sure this will work well with almost any type chocolate.
TO MAKE THIS YOU WILL NEED
rolled oats, preferably organic * - 1 cup blended into a flour consistency and 1 cup left whole.
dark chocolate or dark chocolate chips
sea salt
date syrup or maple syrup
organic coconut oil
vanilla extract
linseeds (optional)
* For a gluten-free option use a gluten-free certified oats
CHOCOLATE - CHIP COOKIE GRANOLA
Chocolate-chip cookies inspired Granola. for breakfast. Imagine cookies and milk for breakfast.
TOTAL TIME: 30 - 35min
INGREDIENTS
2 cups rolled oats - 1 cup blended into a flour consistency and 1 cup left whole.
20 – 30g dark chocolate, chopped into chunks, or use dark chocolate chips.
¼ tsp salt
¼ - 1/3 cup date syrup / maple syrup ( I suggest starting with ¼ cup and adding more if required)
3 tbsp. melted coconut oil
1 tsp vanilla extract
2 tbsp linseeds (optional)
INSTRUCTIONS
Pre-heat the oven to 180 degrees and line a baking tray with parchment paper or a silicon baking mat.
Add all the dry ingredients into a mixing bowl and give a quick mix.
Mix the wet ingredients together and pour into the dry ingredients.
Mix until well combined.
Press the mixture into the baking tray and bake for 18 – 20 minutes, or until golden.
Let cool completely before breaking the granola into smaller chunks.
Store in an airtight container.
