Chocolate Coconut Nice Cream

Creamy, rich nice cream with toasted coconut, inspired by a bounty chocolate bar. Say hello to your new favourite dessert!
Only 4 ingredients and a blender is what you need to make this indulgent, yet healthy dessert.

CHOCOLATE LOVE
I have a weakness for chocolate and eat chocolate most days, but on days when I feel like keeping my desserts healthier I prefer dessert such as this one....Everything you want from a chocolate ice cream, but without the refined sugar.
Who said a chocolaty dessert should be unhealthy?

ALL YOU NEED ARE THESE 4 INGREDIENTS
and a high-speed blender to make this indulgent dessert:
frozen bananas
cacao powder, unsweetened and preferably organic
coconut drink (not canned coconut milk) or almond milk
desiccated coconut
chocolate protein powder (optional)

COCONUT
Toasting the coconut makes a big difference to the overall taste. I highly recommend it, but toasting is optional.
To toast the coconut simply add the desiccated coconut to a pan and on low heat toast until golden brown. Shake the pan every now and then for an even coating. Keep an eye on it to make sure it doesn't' burn. Once it starts to change colour it will go quick. Depending on how you want to serve the nice cream you might have to use more coconut.
TIP!
For a soft-serve consistency, serve immediately, alternatively freeze for 30 minutes or more for a firmer ice cream texture.
MAKE IT PRETTY
Scoop the nice cream using an ice cream scoop. Add the scoops to a plate of desiccated coconut and roll or sprinkle with the toasted coconut to coat all-over. Place in the freezer for about 20 minutes to firm up.

OTHER HEALTHY CHOCOLATE DESSERTS TO TRY

BOUNTY NICE CREAM
A creamy, chocolaty, smooth and completely healthy dessert, inspired by the much loved bounty bar.
Serves 3 - 4
Time: 5 min
INGREDIENTS
6 bananas, very ripe and frozen
2 heaped tbsp cacao powder
1 scoop chocolate protein powder (optional)
1/4 cup - 1/2 cup desiccated coconut flakes, toasted
INSTRUCTIONS
Add the frozen banana pieces into a high-speed blender and blend until smooth. If required add a splash of coconut milk if needed to make the blending easier.
Add the cacao powder and protein powder (if using) and blend until smooth and well combined.
OPTION 1 : Add the toasted coconut to a bowl or plate. Using an ice cream scoop, scoop the nice cream into balls and roll each in the toasted coconut to coat all over. Transfer the coated nice cream onto a freezer safe plate or tray and place in the freezer for about 20 minutes.
OPTION 2: Transfer the nice cream into a freezer safe container and sprinkle with the toasted coconut. Place in the freezer for about 30 minutes to firm up.
OPTION 3: For a soft serve option transfer the nice cream to serving bowls and serve immediately with toasted coconut on top.
