Chocolate Nice Cream Oats Bowl
Chocolate blended oats with fresh berries and a scoop of chocolate nice cream! This must be the ultimate Sweet Brunch.
Indulgent, yet healthy!
NICE CREAM?
Yes! I have added nice cream to my breakfast, I know this might sound a bit excessive, but hear me out.
When I make chocolate overnight oats I always add a mashed banana as a natural sweetened and of course the cacao powder to make it chocolatey. These are also the same two ingredients I use to make my chocolate nice cream. So I thought why can't I add a scoop of nice cream to the oats, if it's basically the same but in a frozen format? Makes sense, right?
This recipe is part of my SUMMER BRUNCH Series, so it makes complete sense to me to add something cold and as indulgent as nice cream to my breakfast.
I can confirm, it is really good! Especially when sitting in the morning summer sun, with a freshly pressed juice or acai smoothie.
HERE IS HOW
TO MAKE THE NICE CREAM
You will need a few frozen bananas and a good quality cacao powder. That is it!
You can either serve it straight away with your oats or you can freeze it for about 30 minutes before serving.
TO MAKE THE BLENDED OATS
Add rolled oats, almond milk, salt, a banana (or sweetener of choice) and cacao powder to a high-speed blender and blend into a batter-like consistency.
Alternatively you can make a normal overnight oats, without blending it.
The reason I like blending my oats for this recipe is to give it a smoothie bowl vibe, but with more fibre and healthy carbs.
MEAL PREP
You can make all the elements in advance. Store the nice cream in the freezer and keep the oats in the fridge until needed.
You might want to allow time for the nice cream to sit at room temperature to soften a bit - to make it scoopable.
YOU WILL NEED
Rolled oats, gluten-free certified if required
Unsweetened almond or cashew milk
A good quality cacao powder
Chocolate protein powder (optional)
Bananas
A pinch of sea salt
Fresh berries
Toasted nuts, such as hazelnuts or flaked almonds
You will also need a high-speed blender to make the blended oats and the nice cream.
ALTERNATIVES
Use overnight oats, instead of blended oats. Mix the oats ingredients, without blending into a batter-like consistency.
Add chia seeds or hemp seeds
For additional protein you can add a scoop of chocolate protein powder. You might have to add more almond milk if you do.
Use any other fruit if you don't have fresh berries
Sprinkle a bit of homemade granola on top
Add some vanilla extract
Add some nut butter or peanut butter
