Chocolate & Orange Drizzle Cake

Chocolaty, moist and citrusy. Inspired by a lemon drizzle, but using one of my favourite flavour combinations: Chocolate + orange.
A chocolate loaf cake, with a oranges syrup, finished with a pretty, pink blood orange icing. Beautiful!
HOW TO MAKE THIS DRIZZLE CAKE
Make the batter, transfer into a loaf pan and bake the cake.
Remove from the oven, and let it cool for a few minutes before poking a few holes in the warm cake.
Spoon over the orange syrup and let it cool.
Once cooled, remove from the cake tin and drizzle with the pretty orange icing.
Slice
and enjoy!
TO MAKE THIS YOU WILL NEED
plain flour
cacao powder
baking powder
bicarbonate of soda (baking soda)
coconut oil
coconut sugar
oat milk, or milk of choice
juice and zest from fresh oranges, I used blood oranges
icing (powdered) sugar
SWEETNESS
The cake itself, without the syrup and glaze, is not too sweet.
The orange syrup and the icing drizzle add the additional of the sweetness. I find it has a good balance if eaten all together.
However you can add just the syrup or just the icing drizzle if you really don't want the cake too sweet.

NO BLOOD ORANGE
Not to worry, just use any type of orange you can find.
Apart from the gorgeous colour, the difference between blood oranges and the regular oranges is that the blood oranges are often sweeter, almost a bit floral tasting and less acidic than regular oranges.
If you don't have any blood orange but still want that pretty pink icing glaze, you can add a few drops of pink food colouring.
LINING THE CAKE TIN
To prepare the tin, grease the sides slightly with a bit of coconut oil or oil of choice, then add parchment paper on top.
BAKING TIME
Over time I have noticed that ovens vary, Some might take longer than others. The best way to test the cake is by using baking needle. Stick the needle into the centre of the cake. If it comes out clean, then the cake is done.
IMPORTANT! Do not open the oven door for at least the first 20 minutes of the baking time to avoid the cake from sinking.

CHOCOLATE + ORANGE DRIZZLE CAKE

TIME: 45 minutes, excluding cooling time
Makes: 1 loaf cake
INGREDIENTS
FOR THE CAKE
200g plain flour
50g cacao powder
1 1/2 tsp baking powder
1 tsp baking soda
60g melted coconut oil
195g water
180g coconut sugar
30g oat milk or milk of choice
60g orange juice
zest from 1 orange
FOR THE SYRUP
40g caster sugar
15ml water
juice from 1/2 blood orange
squeeze of lemon juice
FOR THE ICING GLAZE (optional)
60g icing sugar, sieved
1 - 2 tbsp orange juice, (blood orange for the pink colour)
a few drops red food colouring (optional, if using regular oranges)
INSTRUCTIONS
Preheat the oven to 180C and prepare a loaf pan. I lined mine with baking paper to make it easier to remove from the tin
Mix the melted oil, coconut sugar, water, orange juice, zest and milk for a few minutes using a hand whisk (not electric whisk)
Sieve the flour, baking powder, bicarbonate of soda and cacao powder.
Add to the wet mixture and mix until well combined, using a hand whisk and spatula (not electrical)
Pour into the prepared cake tin and bake for 30 - 35 minutes or until cooked.
Towards the end of the baking time make the syrup. Heat all the ingredients in a small pot/saucepan until the sugar has dissolved.
Once cooked remove the cake from the oven, and place on the cooling wrack.
Using a cooking needle or toothpick poke a few wholes in the cake (all over)
Spoon over the syrup evenly on top of the cake.
Let it cool fully in the cake tin.
Once cooled, remove from the tin.
To make the icing glaze, mix all the ingredients in a bowl until smooth. If the mixture is too thick, add a few drops of water. If it's too runny, add a bit more icing sugar to the mixture.
Drizzle the icing over the loaf cake using a spoon. Add only as much as you like.
Slice and enjoy!
