Chocolate Overnight Oats

A rich, creamy and extremely chocolaty overnight oats.
It is no secret that I am a probably a bit obsessed with breakfast. Well, sweet breakfasts to be exact.
Almost all my sweet breakfasts included oats in some form or way: granola, overnight oats, muesli, oat and banana pancakes, baked oats or cooked oats.
And then there is another one of my favourite ingredients, cacao powder. It's dark, it's bitter, so comforting and the more cacao the better it gets. In this case more is more!

MAKE IT YOUR OWN
I used almond milk for this recipe, but you can use any milk of your choice.
Depending on consistency you want, you can add or reduce the amount of milk you add.
I used a mashed banana as my sweetener, but you can use other fresh fruit, maple syrup, agave syrup, honey, date syrup or even dried fruit.
Add seeds and nuts for crunch.
Add ground flaxseeds or chia seeds for a nutrient boost.
You don't have to add the salt, but I recommend adding a pinch as it enhances the chocolaty flavour.
Boost the protein level by adding a bit of almond butter to your breakfast.
BREAKFAST ON THE GO
For a breakfast on-the-go, mix this in a glass jar or sealable container the night before, pop in the fridge and grab it on your way. Quick, easy and nutritious!

CACAO POWDER
is extremely high in antioxidants. Research has shown that Raw organic cacao can have about 40 times the amount of antioxidants than blueberries - why not add both ;)

can improve the mood and help with depression and stress
is high in calcium and research has shown that it contains more protein per100g than cow's milk

CHOCOLATE OVERNIGHT OATS
Although there is no actual chocolate in the breakfast, it is just so comforting, so chocolaty and so indulgent!
Add more cacao powder if you want to intensify the dark chocolate flavour.
Serves: 2
Time: 10 min, plus overnight soaking time
INGREDIENTS
FOR THE OATS
80g whole rolled oats
1 heaped tbsp cacao powder
pinch of salt
1 mashed banana, or sweetener of choice
1 tbsp chia seeds
1 tbsp cacao nibs (definitely recommended!)
160ml almond milk or milk of choice. Adjust the amount to the consistency you wish.
FOR THE CHOCOLATE YOGHURT
2 heaped tbsp non-dairy yoghurt
1 heaped tsp cacao powder, or more to your liking
1 tsp maple syrup (optional)
TO FINISH (optional)
Chocolate granola
chopped hazelnuts
cacao nibs
banana slices/ fresh berries (optional)
INSTRUCTIONS
To make the oats add all the oats ingredients into a bowl or glass jar and mix well.
Let it sit to soak overnight in the fridge. Remember cacao powder absorbs a lot of liquid so you may need to add a bit more almond milk in the morning before serving.
When ready to serve mix the yoghurt and cacao until well combined.
Divide the oats between two bowls and top with a dollop of the yoghurt mixture.
Finish with a sprinkle of chocolate granola and chopped nuts (or your favourite toppings).
