Chocolate PB&J Overnight Oats

A nutty, fruity and chocolaty breakfast.
What is better than the flavour combo of pb&j? How about chocolate with pb&j? If you love chocolate and love PB&J, then you will most definitely love these overnight oats too.
Super rich and creamy and so easy to make.
Prepared the night before - it's a quick, healthy and oh-so-delicious breakfast.
REASONS TO LOVE THIS BREAKFAST
Peanut butter is a good source of protein
Some peanut butters are rich in antioxidants
Cacao is high in calcium, iron and magnesium
Cacao contains natural compounds that may reduce anxiety and lift our moods
Cacao is high in antioxidants which promote a healthy, younger looking skin! Yay!
It's refined sugar free (if using a refined sugar-free jam and peanut butter).
and it just tastes soooo good!
TIP!
Make sure to use a peanut butter that doesn't have any added sugars, oils or preservatives.
To maximise health benefits, use cacao powder instead of cocoa powder. Read the difference between the two here.
Use a jam that is refined sugar-free to keep it healthy. See my recipe for my quick blueberry jam below.
For a thicker oat, use a bit less almond milk.
For a runnier oat add more almond milk.
MY QUICK BLUEBERRY JAM
This blueberry jam is so easy to make and so delicious!! All you need is
1 cup frozen blueberries
1 tbsp maple syrup or vegan honey
In a small saucepan heat the blueberries on low. Add a splash of water and the maple syrup. Cook on low for a few minutes until the texture is jam-like. Add more water as needed.
You can also add a tablespoon of chia seeds for a thicker consistency.
ALTERNATIVELY,
You can use any soft, juicy fruit to make the jam, such as raspberries or blackberries.
Another option is to simply use fruit as it is. Soft figs, strawberries and cherries are especially good in this combo,
To make this even more indulgent sprinkle some of this homemade chocolate & peanut butter granola on top.
OTHER BREAKFASTS TO TRY
CHOCOLATE PB&J OVERNIGHT OATS
Chocolate and PB&J - all in one breakfast! No further words needed.
Serves 2
Prep time: 5 min, plus overnight soaking time
INGREDIENTS
80g (1 cup) rolled oats
1 tbsp cacao powder
1 tbsp peanut butter, crunchy or smooth
1 tbsp cacao nibs
1 mashed ripe banana
generous pinch of salt (optional, but recommended)
1 tbsp chia seeds (optional)
1 tbsp raw buckwheat groats (optional)
160ml almond milk/ milk of choice, or to your liking
homemade blueberry jam (recipe above) or chia jam, or jam of choice
INSTRUCTIONS
Mix all the above ingredients in a sealable container and let soak overnight in the fridge. I prefer adding the jam in the morning, but you can already add it the night before.
In the morning, add more almond milk if needed and mix again.
Serve with jam or chia jam, if not added the night before.
Sprinkle with granola/ extra peanut butter / cacao nibs if desired.
