cinnamon apple skillet pancake


One large pancake, topped with cinnamon-spiced apple and a drizzle of maple syrup. Perfect for sharing for a lazy weekend brunch.


This is a quick and easy way to make a weekend pancake brunch. No flipping individual pancakes! Although these are classic autumnal flavours, it is still perfect to enjoy all year around.



TO MAKE YOU WILL NEED


OAT FLOUR.

If you don't have oat flour, simply blend rolled oats into a floury consistency.


APPLE SAUCE.

Homemade apple sauce is always best, but store-bought works well too. To keep the recipe refined-sugar free makes sure that the apple sauce you are using is unsweetened.


APPLES.

Although apples are available all year round, seasonal apples are best. Different apples have different flavours. Some are sweeter than others, so you might want to drizzle a bit more maple syrup over the pancakes if you are using tart apples.


CINNAMON.

Cinnamon and apple are a match made in heaven.


OAT OR ALMOND MILK.

I recommend an unsweetened and organic almond or oat milk.


BAKIND POWDER AND BICARBONATE OF SODA.

To make the pancake fluffy.


VANILLA EXTRACT.

For flavour


TO SERVE:

Apple pieces, none-dairy yoghurt, maple syrup and pumpkin seeds/ nuts/ homemade granola for crunch.





OTHER DELCIOUS TOPPING SUGGESTIONS
  • banana slices and warmed blueberries

  • coconut yoghurt and mango slices

  • or serve with these oven-roasted strawberries

  • Turn it into a dessert and serve it with a scoop of vanilla ice cream

INGREDIENTS

FOR THE PANCAKE

  • 100g oat flour

  • 100g unsweetened apple sauce (store bought or homemade)

  • 120ml oat or almond milk

  • 1/2 tsp baking powder

  • 1/2 tsp bicarbonate of soda

  • 1/2 tsp vanilla extract

  • pinch of salt


TO SERVE

  • 1 or 2 apple to make warmed apple pieces

  • non-dairy yoghurt or yoghurt of choice

  • ground cinnamon

  • maple syrup

  • pumpkin seeds or chopped nuts or granola (optional)


INSTRUCTIONS
  1. Preheat the oven to 180C

  2. Mix the oat flour, baking powder, bicarb and salt in one bowl and the apple sauce, milk and vanilla in another bowl.

  3. Pour the wet ingredients into the dry and mix until well incorporated. Do not overmix.

  4. Pour the mixture into a greased ovenproof pan (or ovenproof non stick pan) and bake in the oven for 15 - 18 min or until cooked.

  5. Whilst the pancake is baking, peel and cut the apple into small pieces and sauté in a small pan with 1 tbsp water and 1/2 tsp ground cinnamon. You can add 1 tbsp maple syrup if using tart apples.

  6. Cook for about 2 minutes or until soft to your liking. I prefer mine still a bit crunchy.

  7. Serve the hot pancake with yoghurt, apple pieces, more cinnamon, maple syrup and granola for crunch.
