Coffee Chocolate Baked Oats

Gooey chocolate oats with subtle coffee flavour, finished with a rich coffee chocolate sauce.
Currently this breakfast is on repeat. I mean, what is not to love about this. The flavour combination is excellent and the warming oats is comforting when its grey and rainy outside. Plus Christmas is now over, so a little additional comfort is requires.
TO MAKE THESE YOU NEED
Old fashioned rolled oats. For gluten-free option use a gluten-free certified oats
Cacao powder, ideally organic
Instant coffee, I used decaffeinated
Almond milk or milk of choice
Baking powder
A banana
Optional: cacao nibs, vegan dark chocolate chips and maple syrup
and a pinch of sea salt to balance the flavours
ALTERNATIVE OPTIONS
Use oat four instead of rolled oats
You can use cocoa powder if you don't have cacao powder. Just make sure the cocoa powder is unsweetened if you want to keep this breakfast refined sugar free.
If you don't have instant coffee you can use an espresso shot. Simply replace some of the almond milk with the espresso shot.
Adding maple syrup is optional, but you can also use a date syrup or agave as a replacement.
I love adding the banana as it adds natural sweetness and acts as a binder. You can omit the banana if you like though the texture might however be a bit different, but still delicious!
Another option could be to replace the banana with 1/2 tbsp chia seeds or apple sauce.
THAT FIRST SCOOP
My favourite part is that first scoop - dipping the spoon into the baked oats, hoping to have a gooey centre.
If you like a gooey centre I recommend cooking the oats for about 15 minutes. If you prefer a more cakey texture then bake the oats for 15 minutes or so. Ovens all cook differently so its worth checking after 12 minutes.
Okay, so lets talk about...
HOW TO MAKE THIS
It is really easy.
You have two options. First option is to use a high-speed blender to blend all the ingredients until smooth. Pour into a ramekin and bake in the oven. Blending the ingredients gives it that batterlike texture and will result in a cake-like oats. This is my personal preference.
The second option is to use oat flour or rolled oats as it is. Simply mash the banana and mix all the remaining ingredients together, transfer into the ramekin and bake. The texture of the oats will of course not be a smooth and fine as option one, but it will taste just as delicious!

INGREDIENTS
FOR THE OATS
40g rolled oats or oat flour
1 heaped tsp cacao powder
1 small banana mashed (about 40g)
1 heaped tsp instant coffee
pinch of sea salt
1 tbsp maple syrup (optional)
1/2 tsp baking powder
80ml almond milk (or see additional options above)
a few chocolate chips (optional)
OPTIONAL TO SERVE
Cacao nibs
HEALTHY CHOCOLATE COFFEE SAUCE
2 tsp cacao powder
1 tsp instant coffee
maple syrup (optional)
INSTRUCTIONS
Preheat the oven to 180C
Add all the oats ingredients except for the chocolate chips into a high-speed blender and blend until a batter-like texture. (See above for an option if you don't have a blender)
Transfer the mixture into an oven-proof ramekin and sprinkle with a few chocolate chips (optional).
Bake in the oven for 15 - 18min.
In the meantime make the sauce by mixing the cacao powder with a bit of hot water to make a paste.
Add the instant coffee powder, 1 tbsp maple syrup (optional) and more water until the desired consistency of a runny chocolate sauce.
Pour the chocolate sauce over the baked oats, sprinkle with cacao nibs and enjoy!
