Coffee & Date Caramel Overnight Oats

Sweet date caramel with coffee flavoured creamy oats. The combination of bitter and sweet is absolutely dreamy.


If I can have a sweet and indulgent breakfast that is healthy and without any added sugar, then I am on board.

As a coffee lover I can say this breakfast hits all the right spots.



Coffee Caramel Overnight Oats


THE CARAMEL

Soft dates are soaked in water and blended into a creamy, smooth caramel paste. By using dates only makes this caramel refined sugar-free and healthier than most caramel sauces.


If the dates you are using are a bit hard or dry, you might want to soak them for a bit longer. The best way to soak dates is by covering them with hot water and let them sit for about 10 - 15 minutes.


TIP!

Add a pinch of fine sea salt to make a salted caramel sauce.

Adjust the amount of water added to get the thickness/ consistency of the caramel you like.



WHICH DATES TO USE

Medjool dates are the best in my opinion. They are unfortunately rather pricy, but they are deliciously soft and have a natural caramel flavour.


I also love using soft noor deglet dates. They are a bit less sweet than Medjools, but they have a delicious nutty flavour. Deglet dates are not as soft as Medjool and therefor require a bit more soaking to soften them.


You can also use date syrup if you don't have the time or patience to make the date caramel.



BENEFITS OF DATES

Dates make a great snack for active woman as they can provide good energy.

Ladies, make them your friend during your monthly period as they can help relieve irritability, fatigue and abdominal cramps.

Medjool dates might be high in calories, but they happen to also be full of nutrients and antioxidants.

Some of these benefits include slowing down the ageing process, strengthening nails and tightening skin.


I recommend keeping a few dates in the freezer for a delicious chewy caramel-like snack.

THE OATS

The coffee flavoured oats are absolutely delicious with the sweet caramel sauce.

To make the oats you can either mix an espresso shot with almond milk or add instant coffee, this is up to you.


Old fashioned rolled oats are my personal preference to use, but quick cooking oats will work fine too.


TIP!

Use decaf coffee to avoid a caffeine kick.

For a gluten-free option use a gluten-free oats.

COFFEE CARAMEL OVERNIGHT OATS

TIME: 15 minutes, plus overnight soaking time

SERVES 2



INGREDIENTS

FOR THE OATS

  • 1 cup rolled oats, I blended mine into a flour, but this is optional

  • 1 cup almond milk (or add an espresso to a cup and top with almond milk)

  • 1 tbsp instant coffee (unless using espresso)

  • 1 tsp maca powder

  • 1 tbsp chia seeds


FOR THE VANILLA YOGHURT

  • 3 tbsp plain, non-dairy yoghurt

  • 1 tsp vanilla bean paste


FOR THE DATE CARAMEL

  • 5 or 6 soft dates, soaked in hot water for about 15 minutes



INSTRUCTIONS

  1. To make the overnight oats, mix all the oats ingredients and set it soak overnight in the fridge.

  2. In the morning make the date caramel: drain the soaked dates and blend with 2 tbsp water until a smooth paste. Add more water as needed. Add a pinch of salt for a salted caramel taste.

  3. Divide the oats between two bowls or jars.

  4. Mix the yoghurt and vanilla bean paste and spoon on top of the oats.

  5. Finish with a layer of the date caramel and some granola (optional) and enjoy!
