Coronation Chickpea Salad

Sweet, tangy, fragrant and creamy chickpea salad. This is my vegan take on the classic coronation chicken salad.
It is a long weekend and we are celebrating the coronation of the new king. What better time to post the recipe, right?

WHAT IS A CORONATION SALAD
Traditionally made with shredded chicken, it is mixed with a creamy curry mayonnaise dressing, mixed with chutney and raisins.
To make this vegan friendly I replaced the chicken with mushed chickpeas and replaced the mayonnaise with a mixture of vegan mayo and vegan yoghurt.
TO MAKE THIS YOU WILL NEED
cooked chickpeas, canned or cooked from dry
a mild or hot curry powder
vegan mayonnaise
vegan yoghurt
mango or peach chutney
dried apricots or raisins
lime juice
turmeric (optional)
sea salt & black pepper
AND TO SERVE
a few slices of bread
fresh herbs, such as coriander or parsley
fresh lettuce

ALTERNATIVES
I have not tried it yet, but I am sure replacing the chickpeas with pulled jackfruit should work very well too in this recipe
Replace the dried apricots with raisins or sultanas
Replace the mango chutney with peach or your choice of chutney
No lime juice? Not to worry, you can also use lemon juice
If you like it spicy (hot) you can also add chilli powder or fresh, finely chopped chillies
OTHER WAYS TO ENJOY
As a topping on a baked potato
In a salad wrap
Serve in lettuce cups
Add cooked pasta to make a pasta salad
Add cooked baby potatoes to make a potato salad

CORONATION CHICKPEA SALAD

Serves: 2
Time: 10 minutes
INGREDIENTS
350g cooked chickpeas, drained and rinsed
1 tbsp vegan yoghurt
1 - 2 tbsp vegan mayonnaise
2 or 3 dried apricots, finely diced
1 heaped tsp mild curry powder, or more to taste
1/2 tsp ground turmeric
1 tbsp mango or peach chutney, or more to taste
1 - 2 tbsp lime juice, or to taste
sea salt and black pepper to taste
TO SERVE
A few slices bread of your choice
fresh lettuce
fresh herbs
INSTRUCTIONS
Using a fork, roughly mash the chickpeas in a mixing bowl. Keep bigger chunks and whole chickpeas.
Add all the rest of the ingredients and mix well.
Taste and adjust seasoning as needed. Add more lime juice for acidity, Add chutney or more apricots for sweetness and curry powder if it needs more spice.
To assemble add a few lettuce leaves on a slice of bread, top with the chickpea mix and finish with fresh herbs (optional).
