Dark Chocolate & Sea Salt Brownies

These vegan brownies are deliciously fudgy, rich, intensely chocolaty and finished with a sprinkle of sea salt flakes.


The sea salt intensifies and brings out the natural chocolate flavour and takes these brownies to the next level.

Dark chocolate chunks and fudgy bites... If you are looking for a sweet and salty indulgent, these are all a good brownie should be!

Over the past few months I have done tons of recipe testing and although it is a LOT of fun, eating it all is nearly impossible. Especially the sweet recipes.


I feel like I have reached my sugar intake for the year and it's not even Christmas yet.



SHARE OR FREEZE

This is one of those recipes where I was so happy with the result and instead of ending up in the freezer I could share these delightful Christmas bites with others.


If you do not feel like sharing, you can pop them in the freezer in an airtight container. Simply let them defrost at room temperature when you feel like a piece.

Vegan Brownie Recipe


FUDGY OR CAKEY

Are you team fudgy or team cakey?


Brownies are one of those recipes where that one extra minute shorter or longer in the oven can make a big difference to the end result. Bear in mind the brownies will still be sitting in the hot baking tray after baking while they are cooling down.


I am definitely team fudgy, but if you prefer more cakey brownies keep them in the oven a bit longer.



Dark chocolate and sea salt brownie


TO MAKE THESE YOU WILL NEED

  • macadamia or vegetable oil

  • plain flour

  • brown or coconut sugar

  • vanilla extract

  • almond milk, or milk of choice. Make sure it is unsweetened

  • cacao powder, unsweetened

  • baking powder

  • salt

  • dark chocolate, 70% or more. Make sure it's vegan!

  • sea salt flakes to finish

  • and a bit of patience to wait until they have cooled down enough to dig in.



Easy vegan brownie


DARK CHOCOLATE AND SEA SALT BROWNIES


These vegan brownies are deliciously fudgy, rich and chocolaty, finished with a sprinkle of sea salt flakes.



To use: 20 x 20cm square baking tin

Makes about 25 small brownies (depending on size you want)

Prep time: 10 min

Baking time: 20 - 30 min (depending on preference)



INGREDIENTS

  • 100g macadamia or vegetable oil (note I have used grams not ml)

  • 300g brown or coconut sugar

  • 1 tsp vanilla extract

  • 110g cacao powder, unsweetened

  • 120ml unsweetened almond milk or milk of choice

  • 150g plain flour

  • 1 tsp baking powder

  • 1/3 tsp salt

  • 100g (vegan) dark chocolate, chopped or use chocolate chips

  • sea salt flakes for sprinkling



INSTRUCTIONS

  1. Preheat the oven to 175C and prepare the baking tray by lining or greasing the pan.

  2. In a mixing bowl add the flour, cacao powder and baking powder and give a good mix.

  3. In another mixing bowl add the oil, vanilla, almond milk, salt and sugar and mix with a whisk or spoon.

  4. Add the flour mixture into the liquid mixture (through a sift) and stir until well combined.

  5. Add the chocolate chunks and give another quick mix before transferring into the baking tin.

  6. Bake in the oven for 20 - 30 min (depending on your preference of the texture). Remember the brownie will still sit in the hot baking tin afterwards for about 20min which will still "cook" the cake a bit more.

  7. Let the brownies cool in the tray for about 20min, before removing from the tin.

  8. Once the brownies have cooled completely, sprinkling with sea salt and cut them into squares. Enjoy!
