Date bark

This is the viral recipe for the date bark. Layers of dates, crunchy peanut butter and dark chocolate, finished with a sprinkle of sea salt flakes.

These taste like snickers and are in my opinion the ultimate, indulgent snack as they are healthier than the chocolate bars.


Make a larger batch and keep them in the freezer.

If you love the snickers stuffed dates, then you will definitely love this recipe.


Here is my recipe for the "snickers" stuffed dates.


It was about time that I tried this viral trend and it was so worth it! I only make these in small batches... this is basically my way of self control when it comes to snacking on these.



YOU WILL NEED


  • Medjool dates - I recommend using Medjool dates as they have a delicious caramel flavour. Make sure they are soft.

  • your favourite crunchy peanut butter - I love a dark roasted, crunchy peanut butter

  • dark chocolate - I recommend 70% or higher as the dates are already really sweet. The more bitter in flavour the better. This will help balance the flavours.

  • cold pressed coconut oil, preferable extra virgin. Don't skip this as the coconut oil helps set the chocolate and gives it that glossy finish.

  • sea salt flakes (optional) - highly recommended as it will help balance and enhance the flavours.



Chocolate and peanut butter date bark


HOW TO MAKE THEM


Line a baking sheet or tray with parchment paper.

Remove the pits from the dates and flatten them. Make sure they are close enough to each other, but not so close so that they overlap.

Spread a layer of peanut butter on top of the flattened dates. If you are using a smooth peanut butter I would recommend sprinkling a few peanuts or almonds on top - for the crunch!

Melt the chocolate and coconut oil in the microwave or on the stove top over a steamed pot until smooth.

Drizzle the chocolate over the peanut butter. Spread out evenly if you want.

Finish with a sprinkle of sea salt flakes.

Transfer the tray to the fridge or freezer until the chocolate has set.

Once set cut or break the bark into smaller pieces

I prefer keeping mine in the freezer.



VARIATIONS


  • For a peanut-free version replace the peanut butter with another nut butter or seed butter.

  • Add additional chopped peanuts or chopped almonds or hazelnuts

  • Sprinkle a layer of homemade granola or coconut flakes

DATE BARK


The viral snickers inspired date bark. Layers of dates, crunchy peanut butter and dark chocolate, finished with a sprinkle of sea salt.


Time: 10 minutes, plus chilling time.

Makes: 10 servings



INGREDIENTS

  • 2 - 3 tbsp crunchy peanut butter

  • 10 soft Medjool dates

  • 1/2 cup dark chocolate chips ( 70% cacao or more)

  • 1 tsp coconut oil

  • sea salt flakes



INSTRUCTIONS

  1. Line a baking sheet or tray with parchment paper.

  2. Remove the pits from the dates, split them open and flatten them on the tray. Make sure they are close enough to each other, but not so close so that they overlap.

  3. Spread a layer of peanut butter on top of the dates. Spread it out evenly across the dates.

  4. Melt the chocolate and coconut oil in the microwave until smooth.

  5. Drizzle the chocolate over the peanut butter. Spread out evenly if you want.

  6. Finish with a sprinkle of sea salt flakes.

  7. Transfer the tray to the fridge or freezer until the chocolate has set.

  8. Once set cut or break the bark into 10 smaller pieces.
