easy tofu scramble

A delicious, healthy vegan alternative to scramble eggs. This scramble is made with firm tofu, silken tofu, spices and finished with a bit of Kala Namak for the eggy flavour.

WHAT IS TOFU?
Tofu is also known as bean curd and is made by curdling fresh soy milk and formed into a solid block. It is a good source of protein and can be used in many ways, in both sweet and savoury dishes. Read more about it here.
This recipe requires firm and silken tofu. The firm tofu gives it a bit of texture, whilst the silken tofu gives it that soft, creamy finish.
WHAT IS KALA NAMAK?
Kala Namak is also known as Himalayan black salt and is a kiln-fired rock. It has a sulphurous pungent-smell and is said that it has alkaline properties which may help reduce excess acid in the stomach.
I tried Kala Namak for the first time a few months ago and I was blown away by how much the tastes resembles real eggs. It is not necessary to use it, but it certainly is worth a try. For this recipe you can use any type of salt if you don't have it.

TOFU SCRAMBLE
The vegan alternative to egg scramble. Just so much better.
Serves: 3 - 4
Time :10 min
INGREDIENTS
1 block extra-firm tofu (about 280g)
100g silken tofu
1/2 tsp turmeric powder
1/2 tsp smoked paprika
1/2 tsp onion powder
Sea salt to taste
Black pepper to taste
olive oil for frying
kala namak to finish
OPTIONAL
cut chives
fresh herbs of choice
chilli flakes
INSTRUCTIONS
Use a fork or your fingers to crumble the firm tofu into bite-sized pieces.
In a non-stick pan add the firm tofu pieces (not the silken tofu), onion powder, half the turmeric and half the smoked paprika and fry for 2 - 3 minutes. If you are not using a non-stick pan, add a bit of olive oil to the pan.
Add the silken tofu, the rest of the smoked paprika and turmeric and season with sea salt and black pepper. If using, add the chives, fresh herbs and chilli flakes now. Cook for another 2 - 3 minutes. Stir constantly.
Finish with a sprinkle of kala namak (optional) and serve immediately
