Frozen Shaved Fruit
with non-dairy yoghurt and a drizzle of maple syrup. My take on the viral frozen fruit and yoghurt.
This is not really a recipe, but just giving you an idea of what I did to create the colourful yoghurt bowl.
I am eating the rainbow with this frozen fruit and yoghurt bowl today, which also means a variety of nutrients!
I love using a variety of fruit, but you can use just one or as many as you like.
THE FRUIT
You can use any fruit you like, but it will need to be frozen to be able to grate it.
Fruit such as berries, peaches, dragon fruit, strawberries and banana are especially delicious!
THE YOGHURT
I used an unsweetened soya based yoghurt today, but you can use any yoghurt you prefer.
A vanilla or oat based yoghurt will be delicious too!
GRATING
I love using my husbands parmesan grater as it makes it so much easier, but you can use a standard box grater.
ADDITIONAL
Sprinkle with toasted nuts or granola for some crunch.
ALTERNATIVE
Swap the maple syrup for date syrup or honey.

INGREDIENTS
Frozen cherries
Frozen strawberries
Frozen mango
Frozen peach
Frozen kiwi
Maple syrup
non-dairy yoghurt or your favourite yoghurt
INSTRUCTIONS
To a bowl add your yoghurt, about half a cup or more to your liking.
Using a grater grate the frozen fruit. Add as to your liking. To get this effect like in my photos I started by grating the darkest fruit first and finished with the lightest.... but that is completely up to you.
Drizzle with a bit of maple syrup and enjoy immediately.
