Frozen Yoghurt Bark

Frozen yoghurt shards topped with blueberries and toasted hazelnuts. This makes a healthy, yet delicious snack or dessert.


This is such a delicious snack - it is 8 C degree outside and I am sitting on the sofa cuddled up in a blanket whilst snacking on these. Yes, that is how much I like this snack. I recommend making a batch right now and keep in the freezer for whenever you feel like something sweet.

YOU WILL NEED

FOR THE BASE

  • A plain, thick yoghurt or yoghurt of choice

  • Liquid sweetener of choice, such as maple syrup, agave or honey (vegan alternative) - Omit if you are using a sweetened yoghurt


THE TOPPINGS ARE UP TO YOU

I used blueberries, roasted hazelnuts and the Sweet Sandwich Seasoning from Just Spices, which is a mixture of almonds, cocoa beans, hemp seed, dried banana, puffed amaranth, cocoa powder and ground cinnamon.



HERE ARE FEW IDEAS
  • Fruit or berries of choice, e.g. kiwi slices, raspberries, mango pieces, etc

  • Nuts of choice - hazelnuts, almonds, cashews, etc

  • Drizzle with peanut butter/ melted chocolate

  • Coconut flakes/ puff quinoa/ granola/ cacao nibs - completely up to you

  • Mix ground spices into the yoghurt such as cinnamon or ginger

  • Flavour the yoghurt with matcha powder or cacao powder



RIDICULOUSLY EASY

It's as simple as spreading the yoghurt on a freezer safe tray or baking sheet, sprinkle with your toppings of choice and freeze. Break into smaller pieces and enjoy!

FROZEN YOGHURT BARK


Frozen shards of yoghurt topped with blueberries and toasted hazelnuts. This makes a healthy, yet delicious snack or dessert.


Prep time: 5 minutes

Freezing time: 1 hour

Serves: about 6



INGREDIENTS

  • 3/4 cup plain, thick yoghurt (plant-based)

  • 1 -2 tbsp maple syrup or vegan honey alternative

  • a handful blueberries

  • a handful roasted hazelnuts, roughly chopped

  • sprinkle with cacao nibs/ granola/ puffed amaranth/ granola or toppings of choice



INSTRUCTIONS

  1. Mix the yoghurt and maple syrup. Stir well.

  2. Pour onto a freezer safe tray and spread out evenly, but not too thin.

  3. Sprinkle with blueberries, hazelnuts and granola or toppings of choice.

  4. Place in the freezer and freeze for at least an hour.

  5. Break into smaller pieces and enjoy.

  6. Keep leftovers in the freezer.
