gingerbread pancakes (vegan)


Soft, gingerbread-spiced pancakes, drizzled with a healthy, homemade cinnamon-chocolate sauce. These are the perfect breakfast for Christmas morning. Christmassy and indulgent, but healthy.


You'll only need 8 ingredients and are super easy to make. If you are not in the Christmas spirit yet, these will certainly do the trick.


And just in time for Christmas....




TO MAKE THE PANCAKES YOU WILL NEED
  • a large, ripe banana

  • rolled oats, for gluten-free make sure it is gluten-free certified

  • oat milk, or milk of choice

  • baking powder

  • chia seeds

  • and gingerbread spices (cinnamon, ginger and nutmeg)

(It's basically like you are eating a bowl of gingerbread spiced oatmeal, but in pancake form)



TO MAKE THE CHOCOLATE SAUCE YOU WILL NEED
  • unsweetened cacao powder

  • 1/4 tsp cinnamon (optional)

  • a little bit of maple syrup

  • and hot water


CAN IT GET ANY EASIER?

To make the pancakes, all you need to do is blend everything together until completely smooth and cook on the stove top until golden*

To make the sauce is whisk all the ingredients until smooth. Make sure to use hot or boiling water to make the mixing process easier.


* To keep the pancakes oil-free I recommend using a non-stick pan.


Be patient when making pancakes. Fry on medium and let them cook until golden before flipping.




LET'S TALK BANANAS

It is important that the banana is ripe, leaning towards overripe and spotty. Using an unripe or green banana will affect the taste and texture. It will result in less sweeter pancakes and a heavier texture.


For those who don't like bananas, I have not tried it yet, but I am sure apple sauce could work too. It might be that you need to add a bit more chia seeds or oats.

GINGERBREAD PANCAKES (VEGAN)

Serves: 2 - 3

Prep time: 5 min

Cooking time: will depend on batch size you are cooking.



INGREDIENTS
FOR THE PANCAKES
  • 1 large, ripe banana

  • 1 1/2 cup rolled oats (gluten-free is required)

  • 1 cup oat milk, or milk of choice

  • 1 tsp baking powder

  • 1 tsp chia seeds

  • 1/2 tsp ground cinnamon (or more if you prefer)

  • 1/2 tsp ground ginger

  • 1/4 tsp ground nutmeg


FOR THE CHOCOLATE SAUCE
  • 15g raw cacao, unsweetened and preferably organic

  • 1/4 tsp ground cinnamon (optional)

  • 1 tbsp maple syrup, or more if you prefer it sweeter.

  • hot water as needed


TO SERVE
  • a few banana slices

  • dust with cinnamon


INSTRUCTIONS
FOR THE PANCAKES
  1. Add the oats into a high-speed blender and blend until a floury consistency.

  2. Add the rest of the pancake ingredients and blend until smooth.

  3. Heat a non-stick pan on medium heat. Once hot fry the pancakes in batches. Use a ladle or big serving spoon to spoon the batter into the pan to keep them all the same size. Use the back on the spoon to spread out the batter until an even circle.

  4. Fry on one side until golden, flip and repeat until all the batter has been used.

  5. Keep them warm in a low heated oven.


FOR THE SAUCE
  1. Mix the cacao and cinnamon with 1 tbsp hot or boiling water until the mixture is smooth. Add the maple syrup and mix again. If the sauce is too thick, add more water little by little until the consistency you want.


TO SERVE
  1. Serve immediately with top with banana slices and drizzle with chocolate sauce.
