WHAT IS A MUG CAKE?

A mug cake is a single serving cake that is cooked in a mug or cup, in the microwave. It is a very quick and easy method to make a cakey dessert.


It is as easy as mixing all the ingredients in a mug and microwaving it for 40 - 60 seconds.

40 seconds will give a fudgy, gooey texture. If you want the texture a bit more cakey, cook it for 10 - 20 seconds longer.


Enjoy as it is or with a scoop of vegan ice cream for an extra indulgent dessert.

THIS DESSERT IS

TO MAKE THIS YOU WILL NEED

  • cacao powder, unsweetened

  • all purpose flour

  • salt

  • coconut sugar or granular sweetener of choice

  • baking powder

  • a banana

  • oat or almond milk or milk of choice

  • cold brewed coffee

  • vanilla extract

  • 70% dark chocolate or chocolate of choice

TIPS!

  • I used a 70% dark chocolate for the melting centre, but any type of chocolate should be fine.

  • For a gluten-free version, use oat flour instead of all purpose flour.

  • For a nut-free version, use oat milk or any nut-free milk of choice.

  • To keep this recipe oil-free I used a mashed banana.

  • Using the banana also adds natural sweetness meaning less sugar needs to be added to the mixture.

  • The mashed banana helps make the "batter" more gooey and fudgy.

Time: Less than 2 min



INGREDIENTS

  • 1 tbsp cacao powder, unsweetened

  • 3 tbsp all purpose flour

  • pinch of salt

  • 1 1/2 tsp coconut sugar or sweetener of choice

  • 1/4 tsp baking powder

  • 1 small mashed banana (about 3 tbsp)

  • 2 tbsp oat or almond milk or milk of choice

  • 1 tbsp cold brewed coffee or more milk

  • 1/2 tsp vanilla extract

  • 1 or 2 squares of 70% dark chocolate



INSTRUCTIONS

  1. Mix all the dry ingredients together until well combined.

  2. Add the wet ingredients and mix again.

  3. Pour 2/3 of the mixture into a mug and add the chocolate pieces in the centre.

  4. Top with the rest of the mixture and microwave for 40 seconds.

  5. If you want the texture more cakey, microwave for 10 - 20 seconds more.

  6. Enjoy by itself or with a scoop of vegan ice cream.
