Grain-free Granola

So crunchy, sweet and grain-free! This granola is best served with yoghurt or almond milk and berries. Not only is this chunky granola gluten-free, it is also vegan and super easy to make.



Gluten-free Granola


TO MAKE THIS YOU WILL NEED

  • large coconut chips

  • mixed nuts - I used cashew, almond, macadamia and brazil nuts

  • seeds - I used sunflower and pumpkin seeds

  • coconut oil

  • maple syrup / agave syrup or honey

  • pinch of salt

HELPFUL TIPS!


  • The longer you roast it, the darker it will get, the better the taste! You can bake it for shorter or longer if you prefer your granola even darker.

  • Use large coconut chips as they will break into smaller chunks during the stirring and mixing process.

WAYS TO ENJOY THE GRANOLA

  • with yoghurt and fruit, I suggest trying it with these roasted strawberries

  • with milk of choice and fresh fruit

  • sprinkled over baked fruit

  • sprinkle over your smoothie bowl

  • sprinkle on your toast (it sounds weird, but it is delicious!)

  • sprinkle on your porridge or overnight oats for extra crunch

  • or as a snack, on its own



Vegan Gluten-free granola


GRAIN-FREE CHUNKY GRANOLA


So crunchy, sweet and grain-free! This chunky granola is best served with yoghurt or almond milk and berries. It is also gluten-free, vegan and so easy to make.



Prep time: 5 min

Cooking time: 40 min

Total time: 45 min

Serves: 4 - 6



INGREDIENTS

  • 1 cup coconut chips

  • 2 cup mixed nuts, roughly chopped

  • 3 tbsp sunflower seeds

  • 2 tbsp pumpkin seeds

  • 1 tbsp coconut oil, melted

  • 1 - 2 tbsp maple syrup / agave syrup / honey

  • pinch of salt (optional)



INSTRUCTIONS

  1. Preheat the oven to 180C / 160C fan and prepare a baking tray.

  2. Heat the coconut oil and maple syrup for a few minutes, until hot. Remove from the heat and set aside.

  3. In a large bowl, mix all the ingredients until evenly covered with the coconut oil and maple syrup.

  4. Transfer and spread the granola evenly onto the baking tray.

  5. Bake for 15 - 25 min*, or until golden and toasted to your liking. After 10 min stir the granola every 5 min if needed to ensure an even toasting and to prevent burning.

  6. Let it cool completely before transferring and storing in an airtight container.
