Grain-free Granola
Updated: Jul 8
So crunchy, sweet and grain-free! This granola is best served with yoghurt or almond milk and berries. Not only is this chunky granola gluten-free, it is also vegan and super easy to make.
TO MAKE THIS YOU WILL NEED
large coconut chips
mixed nuts - I used cashew, almond, macadamia and brazil nuts
seeds - I used sunflower and pumpkin seeds
coconut oil
maple syrup / agave syrup or honey
pinch of salt
REASONS YOU WILL LOVE THIS GRANOLA
it is crunchy
it is sweet
it is gluten-free
it is vegan
ridiculously easy to make
HELPFUL TIPS!
The longer you roast it, the darker it will get, the better the taste! You can bake it for shorter or longer if you prefer your granola even darker.
Use large coconut chips as they will break into smaller chunks during the stirring and mixing process.
WAYS TO ENJOY THE GRANOLA
with yoghurt and fruit, I suggest trying it with these roasted strawberries
with milk of choice and fresh fruit
sprinkled over baked fruit
sprinkle over your smoothie bowl
sprinkle on your toast (it sounds weird, but it is delicious!)
sprinkle on your porridge or overnight oats for extra crunch
or as a snack, on its own
