green immunity-boosting soup

This vibrant, green soup is nourishing, comforting, purely healthy, delicious and a breeze to make.


On the weekend we bulk bought some amazing fresh produce from our favourite greengrocer, with the knowledge we would have a few weeks of colder weather ahead. What better way to get more veg in during colder days than with a comforting bowl of soup and a side of crusty bread to soak up the soup.


Yesterday we made a Thai butternut soup and today this nutritious, immune boosting Broccoli, Pea & Miso soup.




ARE YOU A SOUP LOVER?

I love soup. Especially soups that include pumpkin, peas or Moroccan flavours!

I also love the fact that soups, like this one, can easily results in ZERO FOOD WASTE. Broccoli stems and spinach stalks are chopped and added to this soup, which happens to increase the nutritional value and flavour but also reduces food waste.


Cooking big batches also means stocking up the freezer for quick, healthy weekday meals.





TO MAKE THIS YOU ONLY NEED 9 INGRIENTS

  • broccoli

  • peas, fresh or frozen

  • onion

  • garlic

  • miso paste (light or dark - depending on preference)

  • spinach or kale

  • vegetable stock

  • salt & pepper

HEALTHY AND DELICIOUS

The main ingredients in this soup are broccoli, peas, spinach and miso.


Broccoli is a good source of protein, calcium and fiber and contains vitamins A, C, E, K and various B vitamins. It also includes iron, calcium, potassium, selenium and magnesium.


Peas are a good source of protein and antioxidants that strengthen our immune system. Peas are also a good source of vitamins C, E, A and various B vitamins. They can help lower risk of diabetes, heart diseases and help reduce inflammation.


Spinach contains vitamin A, C, K1, iron, calcium and folic acids. Spinach is promotes good eye health and may help prevent cancer and reduce blood pressure levels.

WHAT IS MISO AND WHAT ARE THE HEALTH BENEFITS


Miso is a paste made from fermented soybeans and adds a salty umami flavour to dishes. It is an essential condiment of many Japanese dishes.


It provides beneficial bacterial to help your gut stay healthy.


Miso is rich in essential minerals and a good source of various vitamins: Vitamin E, K, and various B Vitamins.

GREEN IMMUNITY-BOOSTING SOUP


A nourishing green soup that is comforting, purely healthy, purely delicious and a breeze to make.



Serves: 4 - 6


Prep time: 5 min

Cooking time: 15min

Total time: 20 min, plus cooling time before blending



INGREDIENTS

  • 2 heads broccoli (about 550g), stems and all, chopped into chunks

  • 2 cups frozen or fresh peas

  • 150g fresh spinach leaves, stems and all, roughly chopped

  • 1 small brown onion, chopped

  • 1 - 2 garlic cloves, crushed

  • 2 - 3 tbsp miso paste (depending on preference)

  • 600ml vegetable stock

  • 600ml boiling water

  • 2 tbsp olive or macadamia oil for frying

  • salt & pepper to taste



INSTRUCTIONS

  1. In a large soup pot, fry the onions in the macadamia or olive oil on low for 5 - 7 min until translucent and starting to golden.

  2. Next, add the crushed garlic and fry for another 2 min.

  3. Add the broccoli and fry for another minute.

  4. Add the water, stock, miso paste and cook for another 4 min with the lid on.

  5. Add the peas and spinach and cook for another minute.

  6. Remove the pot from the heat and let it cool before blending it into a smooth soup using a hand blender or high-speed blender.

  7. Reheat before eating.

  8. ENJOY!
