Harissa Tofu & Avocado Toast

BRUNCH TIME

This recipe is part of my Summer brunch series and it certainly deserves a top spot.

I usually I like keeping recipes that take a bit longer for weekend brunches as I have a bit more time. Even though this is perfect for brunch, it only took me about 15 minutes to make.



GREAT FOR LUNCH

I loved this so much as a brunch I made it again the next day for lunch. Considering that it's so quick to make, it's great as a lunch option.

BALANCED MEAL

This brunch has it all:


  • Plant-protein from the tofu

  • Healthy fats from the avocado and olive oil

  • Fiber from the dark rye or sourdough

  • Spice and a slight sweetness from the Harissa paste

  • Sour from the lemon juice

  • Peppery from the rocket/ arugula



Avocado Toast


TO MAKE THIS YOU WILL NEED

  • smoked tofu

  • harissa paste

  • tomato paste

  • garlic granules

  • a couple slices of your favourite bread

  • an avocado

  • rocket/ arugula

  • fresh lemon juice

  • extra virgin olive oil

  • sea salt and black pepper

  • pumpkin seeds (optional)



MEAL PREP

Make the harissa mixture and marinade the tofu in the mixture overnight. This will allow the tofu to absorb more flavour.

ALTERNATIVE OPTIONS

I used a rye bread, but you can use any bread you like. Toasted or not.

Crumble the tofu instead of slicing to make a tofu scramble

Substitute the tofu for tempeh

Replace the vegan butter with vegan cream cheese - delicious!

Add sliced tomatoes or sundried tomatoes

Replace the rocket with any leavy greens or herbs you like.

Replace the harissa paste with a red pesto.

Harissa Tofu & Avocado Toast


HARISSA TOFU & AVOCADO TOAST


Harissa spiced tofu slices, avocado and arugula on sourdough toast. Sprinkled with a few toasted pumpkin seeds.


SERVES 2

TIME 15 minutes



INGREDIENTS

  • 1 ripe avocado

  • 1 block smoked tofu

  • 2 slices rye or sourdough bread, toasted optional

  • vegan butter

  • 1 cup rocket/ arugula

  • 2 tsp harissa paste

  • 1 tsp (heaped) tomato paste

  • 1 tsp fresh lemon juice, or more to taste

  • 1 tbsp olive oil

  • 1/4 tsp garlic granules

  • Sea salt and crushed black pepper, season to taste

  • 2 tbsp pumpkin seeds



INSTRUCTIONS

  1. In a small bowl mix the harissa paste, tomato paste, lemon juice, olive oil, garlic granules and a pinch of sea salt together.

  2. Slice the smoked tofu into slices. Brush the slices with the harissa mixture. (You can do this the day before and let sit overnight in the marinade)

  3. Add more olive oil to the remaining marinade and set aside.

  4. Heat a pan. Once hot add a tablespoon olive oil and fry the tofu on each side. Remove from the pan.

  5. Toast the slices, if desired.

  6. In the meantime cut the avocado into slices.

  7. To assemble the toast, spread with vegan butter or vegan cream cheese, add a few tofu slices and top each slice with avocado slices.

  8. Drizzle with the remaining harissa mixture. Season with sea salt and pepper and sprinkle with pumpkin seeds and a rocket on top.

  9. Squeeze more lemon juice on top (optional)
