Healthy Breakfast Parfait

Layers of chocolate buckwheat porridge, vanilla chia seeds, homemade granola and fresh berries. This might just be the ultimate breakfast parfait in my opinion.
This make an indulgent breakfast but can also be enjoyed as a healthy dessert.
WHAT IS A PARFAIT?
It is a layered dessert, served in a clear glass.
Most breakfast parfaits are layers of yoghurt, nuts, fruit and granola. It seems appropriate that the word means "perfect" in French.
THE LAYERS
DARK CHOCOLATE BUCKWHEAT PORRIDE (or pudding)
Buckwheat is soaked overnight and blended with cacao and banana until smooth.
VANILLA CHIA SEED PUDDING
Chia seed is mixed with vanilla paste and almond milk.
HOMEMADE CHOCOLATE GRANOLA
I used my chocolate almond granola, but any granola you like will work. Here is the recipe:
BERRIES
I used blackberries as the flavour works so well with vanilla or chocolate, but any fresh fruit will work.
MEAL PREP
You can make this a day or two in advance. It will keep for 2 - 3 days in an airtight container, in the fridge.
The granola will most likely lose its crunch, so I would leave adding the last layer of granola a few minutes before serving.
Alternatively, can make each element in advance and layer the breakfast in the morning when ready to serve.

Serves: 1
Time: about 20 minutes, plus overnight soaking
INGREDIENTS
one portion dark chocolate buckwheat porridge (Recipe below)
one portion vanilla chia seed pudding (Recipe below)
homemade chocolate almond granola (Recipe here)
fresh berries, such as blackberries or blueberries
INSTRUCTIONS
Add half the buckwheat pudding in a glass or jar. Top with half the vanilla chia seed pudding, followed by a few berries and a bit of homemade granola. Repeat the layers with the rest and enjoy!
DARK CHOCOLATE BUCKWHEAT PUDDING
INGREDIENTS
1/2 cup raw buckwheat groats, soaked overnight
1 tbsp cacao powder, preferably organic
1/2 banana
pinch of fine sea salt (optional)
1/2 tsp instant coffee (optional)
a splash of almond milk or milk of choice (add more if needed)
INSTRUCTIONS
Drain the buckwheat groats
Add to a high-speed blender, along with the rest of the ingredients and blend until completely smooth. Add more almond milk if needed. is soaked overnight and blended with cacao and banana until smooth.
Set aside for about 10 minutes to let it thicken
VANILLA CHIA SEED PUDDING
INGREDIENTS
2 tbsp chia seeds
1/4 - 1/3 almond milk (or milk of choice)
1/2 tsp vanilla bean paste
INSTRUCTIONS
Mix all the ingredients together. Start with 1/4 cup almond milk first.
Set aside for about 10 - 15 minutes. Give a good stir after the first 5 minutes. If the mixture is too thick, simply add more almond milk.
