healthy persimmon toast


I love using fresh fruit to toast. Not only does it taste great, it also eliminates the processed sugar that I would have consumed from the jam I probably would have smothered my toast with.


This is a very easy, simple treat which I just had to share.


Freshly sliced persimmon and vegan greek style yoghurt (or vegan cream cheese) on a slice of toasted sourdough.

Finished with a dusting of cinnamon and a few hemp seeds.


SO delicious!




PERSIMMON.

Using a fruit such as persimmon is a great option as they have a honey-like flavour and better yet they are an excellent source of antioxidants and are loaded with nutrients such as Vitamin A, Vitamin C and Manganese.


Other great fruit options are strawberries, blueberries or even apple slices.



YOGHURT OR CREAM CHEESE.

Use a thick, unsweetened yoghurt or a vegan cream cheese as the base.

A greek-style none-dairy yoghurt is my preferred choice, just make sure it is unsweetened or sugar-free.



BREAD.

I recommend using a wholegrain or sourdough bread to increase the fibre intake.



TO FINISH.

Dust with ground cinnamon and finish with a sprinkle of hemp seeds for extra protein.





HEALTHY PERSIMMON TOAST


An inspiration for your next sweet toast craving.


  • 1 slice sourdough bread

  • 1 - 2 vegan Greek-style yoghurt or vegan cream cheese

  • 1 fresh, firm persimmon

  • cinnamon

  • hempseeds


Toast the bread, and spread with the yoghurt or cream cheese.

Add a few slices of the persimmon and finish with a dusting of cinnamon and a few hempseeds.
