Healthy Snickers Nice Cream

Silky smooth, chocolaty and peanut butter nice cream. A healthy frozen dessert, inspired by a snickers bar.
It's sooo good, you will not believe this has not added sugar and is actually healthy! Who said healthy food can't be delicious?!

DELICIOUS!
Since I first made nice cream about 4 years ago, I have not stopped eating it. It is our go-to dessert and therefore always keep frozen bananas in the freezer and cacao powder in the cupboard.
This is my healthy, frozen take on the much-loved snickers bar. I love the combination of the rich, intense chocolate with the nuttiness from the peanut butter and the sweet date caramel.
This smooth chocolate nice cream with crunchy peanut butter and date caramel swirls definitely satisfies my sweet tooth.
5 INGREDIENTS ONLY
frozen bananas
cacao powder
a good quality peanut butter, I suggest crunchy
almond or pea milk or milk of choice
dates to make a caramel or date syrup (optional)

A FEW HELPFUL TIPS!
To keep this recipe sugar-free make sure to use an unsweetened cacao powder and unsweetened almond milk (or milk of choice)
Use a good quality peanut butter - make sure it has no added sugars or oils.
I suggest using a crunchy peanut butter to add some crunch. You can however use smooth peanut butter and add a few crushed peanuts at the end if you like.
You can serve it immediately for a soft-serve texture or freeze it as per my instructions. If you want to eat it straight away, I suggest adding the peanut butter and date caramel once the nice cream is smooth and give one or two pulses to give a rough mix. But do not over blend. Or simply drizzle it over your nice cream and enjoy!

SNICKERS NICE CREAM
An incredibly delicious and healthy dessert! This smooth chocolate nice cream with crunchy peanut butter and date caramel swirls will satisfy any sweet tooth.
Serves: 4 - 6 servings
Prep time: 15 - 20 min
Total time: 20 min, this does not include freezing or soaking time.
You will need a high-speed blender
INGREDIENTS
5 - 6 bananas, quartered and frozen
½ cup almond milk milk, unsweetened
2 tbsp good quality crunchy peanut butter, opt for one that has no added sugars and oils
2 heaped tbsp unsweetened cacao powder, preferably organic
1 - 2 tbsp date caramel (recipe below)
a generous pinch of salt (optional)
For the date caramel (optional):
8 - 10 soft dates
Additional (optional)
chopped peanuts
chocolate chips or cacao nibs
INSTRUCTIONS
To prep ahead:
Peel, quarter and freeze the bananas for 8 hours or overnight.
To make the date caramel (optional):
Soak 8 - 10 dates in hot water for about 20 min to soften. If you are using dry dates they will most likely need to soak longer.
Drain the dates but reserve the water.
Add the dates and 3 tbsp of the liquid to a high-speed blender and blend until completely smooth, scraping down the sides as you go. Add more water as needed and blend again. Set aside until required.
To make the nice cream:
Add the frozen banana pieces, the almond milk, pinch of salt and cacao powder into a high-speed blender and blend until completely smooth and has a soft serve texture. Scrape down the sides as you go and add more almond milk if needed to make the blending process easier.
Transfer the mixture into a freezer safe container.
Add dollops of peanut butter and date paste randomly on top of the nice cream and use a knife, chopstick or toothpick to create swirls with the peanut butter and dates.
Sprinkle with peanuts and chocolate chips, if using.
Place the mixture in the freezer for at least 4 hours or more before serving or serve immediately for a soft-serve texture.
