Lemon Poppyseed Overnight Oats

If you are looking for a breakfast that tastes like dessert, but is also healthy, this is one to try. Citrusy, creamy, rich and indulgent.


With the flavours of a lemon poppy seed cake, you will think you are eating a dessert. (Minus the sugar of course.)

TO MAKE THIS YOU WILL NEED


OATS

I used an oat flour today, made by blending the oats in a blender into a floury consistency, but you can keep the oats as it is. I have made this with both oat flour and whole oats and both had great results. The only difference is when using blended oats is the cake batter like texture, which I personally love. For gluten-free version make sure to use a gluten-free specified oats.



LEMON

Definitely use fresh lemons and not the bottled lemon juice. The taste from bottled lemon juice is very different. Lemon help maintain a healthy complexion and boost the immune system.



LEMON ZEST

This is optional, but it enhances the lemon flavour.



POPPY SEEDS

These little seeds promote good digestion and boost skin and hair health.



ALMOND MILK

Nut milks such as cashew or almond milk are a great option as they add extra creaminess. I used an almond milk today, but you can use any milk of choice.



SWEETENER (of choice)

I love using maple syrup or a mashed banana. You can however use any liquid sweetener of choice, such as honey or agave syrup.



SALT

I recommend adding a pinch of salt to balances the flavours.



YOGHURT

I used an unsweetened Greek-style vegan yoghurt and added a bit of vanilla paste. A vanilla flavoured yoghurt will work great too, but these often have added sugar. Alternatively use a yoghurt of your choice.

WHY YOU WILL LOVE THIS BREAKFAST

  • it is healthy

  • it is easy to make

  • it is fresh and citrusy, but not tart

  • it is really delicious and tastes like dessert

  • if made in a travel safe container or jar this makes for a good an on-the-go breakfast

  • it is vegan and can easily be made gluten-free

  • it is filling and will give you good energy for the day

LEMON POPPY SEED OVERNIGHT OATS


All the flavours of the much loved lemon poppy seed cake, in a breakfast. This certainly is dessert for breakfast!


Serves: 1

Time: 5 min, plus overnight soaking



INGREDIENTS

  • 40g rolled oats, blended into a flour or kept whole (depending on your preference)

  • 3 - 4 tbsp fresh lemon juice

  • 70 ml almond or cashew milk

  • 1 tsp lemon zest (optional but recommended)

  • 1 tbsp poppy seeds

  • 1 tbsp maple syrup or ½ mashed banana, or too taste

  • 1 tbsp vegan Greek-style yoghurt, or yoghurt of choice and more to serve

  • 1/4 tsp vanilla paste




INSTRUCTIONS
  1. Mix all the ingredients together in a jar, bowl or travel safe container.

  2. Refrigerate overnight or at least for 3 hours.

  3. In the morning, add more almond milk or yoghurt if required. Enjoy!
