lychee & elderflower gin cocktail

Summer means refreshing cocktails!

It is currently lychee season in South Africa and I am trying to making the most of them as they are rare and expensive to buy in the UK. They are one of my absolute favourite fruits.



This cocktail is made from with a Elderflower & ginger tea from Chash Tea, which is a blend of ginger root, cinnamon, cardamom, bruised pepper, elderberries, elderflower and mallow blossoms. If you don't have access to this tea you can use Rooibos tea instead.


The delicate floral notes from the Elderflower with the sweetness from the lychees is absolutely divine.


 

LYCHEE & ELDERFLOWER GIN COCKTAIL


Sweet and refreshing with delicate floral notes. Perfect for sundowners.



For 1serving


INGREDIENTS


For the tea syrup:


  • 1 cup brewed elderflower & ginger tea or Rooibos tea

  • 3/4 cup brown sugar



For the cocktail to make 1 serving:


  • 1 tbsp lychees, chopped finely or crushed (about 2 lychees)

  • Double shot gin (about 70ml)

  • 1 shot sugar syrup (about 35ml)

  • 1 tbsp Elderflower cordial

  • ice to your liking

  • Tonic water to top



INSTUCTIONS


For the sugar syrup:

  1. On a low heat, heat the sugar and tea and simmer for about 3 min until the sugar is dissolved and the syrup is thickening.



For the cocktail:


  1. Add a tbsp crushed lychees to the glass, along with the gin, tea syrup and elderflower cordial. Fill the glass with ice and top with the tonic water.

  2. Give a good stir and enjoy immediately.
