Lychee, Macadamia & Vanilla Oats

Finally another recipe on my blog that includes lychees!
This breakfast combines two of my favourite ingredients: lychees and macadamia nuts.
Lychees are at the end of their season here and we still have a full box in the fridge.
As you might have guessed from the name of my blog, lychees are one of my favourite fruit and I have lately been adding them to my smoothies, breakfasts, fruit salads, Thai curries and have basically been snacking on them non-stop.
This overnight oats is prepared the traditional way, but I blended the rolled oat flakes into a floury constancy before soaking. This gives the oats a cake-batter like constancy. So yum!!
You can keep the rolled oat flakes whole if you prefer.
WHY WE LIKE OVERNIGHT OATS
It takes minimal effort to make a delicious and nutritious breakfast.
Mix the oats in a sealable jar for a quick grab-and-go breakfast in the morning
Perfect if you are short on time.
It is super easy.
No cooking is involved, but you can heat it up in the morning if you prefer a warm porridge.
Use fruit to sweeten your oats. I personally prefer using a mashed banana to sweeten my breakfast and it makes it even creamier.
OTHER OPTIONS
For a gluten-free option, make sure to use a gluten-free specified oats.
Use fruit to sweeten the oats for a refined sugar-free breakfast.
Any milk will be fine to use, but I prefer macadamia, almond or oat milk
Replace the macadamia nuts and macadamia butter with almonds and almond butter
If you don't have chia seeds that is fine, you can omit or use ground flaxseeds as an alternative.
Adjust the amount of macadamia milk added - if you prefer a thicker consistency add less milk. If you prefer a runnier oats, simply add more.

LYCHEE, MACADAMIA & VANILLA OATS
A creamy, sweet porridge perfect for the summer.
Serves 2
Time: 5 min, plus overnight soaking
INGREDIENTS
80g whole rolled oats, blended into a flour (or keep whole)
1 tbsp chia seeds (optional)
1 tsp vanilla extract
pinch of sea salt
1 mashed banana or liquid sweetener of choice such as maple or date syrup
6 - 8 lychees, pealed, pitted and roughly chopped
1 tbsp 100% macadamia butter
1 tbsp chopped macadamia nuts
1 cup macadamia/ almond / oat milk or more to mix
TO SERVE (Optional)
2 or 3 more lychees, roughly chopped
a dollop of yoghurt
macadamia butter to drizzle
a few chopped macadamia nuts
homemade granola
INSTRUCTIONS
Add all the ingredients above into into a sealable container. Mix and place in the fridge to soak overnight.
In the morning, add more milk if required and mix again.
Divide between 2 bowl and serve with a dollop of macadamia butter, chopped nuts and more lychee pieces.
