Mango & Coconut Overnight Oats

Sweet mango puree and a creamy coconut oats, topped with a few mango pieces. This tropical breakfast is absolutely heavenly!

Mangoes are one of my, if perhaps, my favourite fruit. It's hard to beat a perfectly ripe, seasonal mango.

I love adding them to both, sweet and savoury, dishes.


Mangoes are one of those foods where I am happy to spend a bit more if I know they will be good and sweet.


A few weeks ago my favourite Indian street food restaurant in town had a few boxes of imported Indian Alfonso mangoes available, so naturally I jumped at that opportunity and bought a box. They were a bit pricey, but my goodness they were absolutely perfect and let's just say they did not last long....floral, super sweet and really juicy.

TO MAKE THIS YOU WILL NEED

  • A fresh, ripe mango

  • old fashioned rolled oats

  • almond or coconut (not from a can) milk

  • desiccated coconut and coconut flakes

  • a mashed banana or sweetener of choice

  • a pinch of salt to balance the flavours



OPTIONAL INGEDIENTS

  • vanilla protein powder (vegan)

  • chia seeds

  • hemp seeds

  • chopped macadamia nuts

  • other fruit such as banana slices or blueberries



MANGO LAYER

Peel and cut the mango. Take 1/2 - 3/4 of the mango pieces and blend into a chunky puree using a stick blender. If you don't have a stick blender you can always cut the mango into small cubes and use the back of a fork to mash them a bit. Save all the juices!

If have not tried this recipe with frozen mango, but I am sure it will work just fine. Let the frozen mango pieces defrost completely before blending.


Keep the rest of the mango pieces to layer on top of the coconut oats.

MAKE IT GLUTEN-FREE

Use gluten-free certified oats for this recipe to make it gluten-free.


MAKE IT SUGAR-FREE

To keep it sugar-free I suggest using banana as a sweetener, but if using a sweet, ripe mango, you might not feel the need to add a sweetener.

Serves 2

Time: 15 minutes, plus overnight



INGREDIENTS

  • 1 cup rolled oat

  • 1/2 cup coconut yoghurt

  • 1 cup almond or coconut milk (not canned)

  • 1 mashed banana or 1 tbsp maple syrup

  • 1 fresh mango, cut into cubes

  • 2 tsp desiccated coconut


TO SERVE

  • 2 tbsp coconut flakes



INSTRUCTIONS

  1. Combine the oats, yoghurt, almond milk, banana and desiccated coconut together.

  2. Using a stick blender blend 1/2 - 3/4 of the mango pieces into a puree.

  3. Divide the mango puree two jars or bowls. Top with a the oats.

  4. Top with the rest of the mango cubes and a few coconut flakes

  5. Seal the jars/ cover the bowls and place in the refrigerator overnight.
