Maple Glazed Carrots
Sweet, maple glazed carrots roasted in the oven until caramelised and soft.. The perfect side for your Sunday roast or Christmas lunch. A very simple prep is required and you only need 4 ingredients.
YOU WILL NEED
Maple syrup
Extra virgin olive oil
Carrots
Sea salt or Himalayan salt
Herbs for serving (optional)
ADDITIONAL FOR SERVING
Crumbed vegan feta
pomegranate jewels
toasted almonds flakes or toasted hazelnuts, roughly chopped
or some chilli flakes
PREPPING THE CARROTS
My personal preference is using medium-sized carrots. Try finding some that are all evenly sized, if possible.
I clean them carrots thoroughly, but don't peel them. You can however peel them if you wish.
You can also cut off the ends, but I find it looks nice if they still have a bit of a leafy tail - as seen in my photos.
If the carrots are very thick, I slice them in half lengthways, which will speed up the cooking time.
Place the carrots in the roasting tray and drizzle them with the olive oil and maple syrup. Mix them well to coat evenly. Arrange them on the tray cut-side down and season with salt.
Place in the oven and roast until soft and the edges start to caramelise.
Depending on the size of the carrots, you might have to adjust the roasting time.
Using a variety of different carrot colours can look really beautiful too.
MAPLE SYRUP
Make sure to use a 100% maple syrup and not a maple flavoured syrup! There is a big difference between them.
If you don't have maple syrup feel free to experiment with honey.
Alternatively you can always omit using a liquid sweetener and serve the roasted carrots with a drizzle of pomegranate molasses or a tahini dressing.
HERBS
Parsley works especially well with these carrots. If you don't have parsley you can always use some of the carrot tops. Wash them, pat them dry and chop them finely. It will enhance the carrot flavour even more.

ROASTING: 25 minutes
SERVES 2 - 3, as a side
INGREDIENTS
300g carrots
1/2 - 1 tbsp maple syrup
2 tbsp extra virgin olive oil
sea salt, to season
INSTRUCTIONS
Preheat your oven to 200C.
Clean you carrots thoroughly and pat them dry. Cut larger carrots in half, lengthwise.
Place the carrots in the roasting tray and drizzle them with the olive oil and maple syrup. Mix them well to coat evenly. Spread the carrots out and arrange them on the tray cut-side down and season with salt.
Place in the oven and roast for 25 minutes or until they are cooked to your liking and the edges start to caramelise. Flip halfway through.
Serve hot, with fresh herbs such as parsley.
