mince pie truffles


If you are wondering what to do with the left-over mincemeat you might have in your fridge, I recommend making these.

Delightful bites made with mincemeat, desiccated coconut flakes, crushed digestive biscuits, flaked almonds, coated in dark chocolate and dusted with cinnamon. It could not taste more like Christmas.


With only a hand-full of ingredients, these Christmas bites are super easy to make and slightly addictive.

And despite their name, they are completely vegan.




MINCEMEAT

First of all, I feel I should clarify to all my none- England friends that mincemeat (used in mince pies) does not actually contain any meat. It is in fact a mixture of dried fruit (such as currants, raisins, sultanas), spices, sugar, citrus peels and sometimes with a bit of liquor such as rum or brandy . Mincemeat can be found in most grocery stores during the festive season and are more often than not suitable for vegans. No doubt homemade tastes best, but store-bought works well too.


As a child I did not like raisins or dried fruit, especially not in baked goods. Unless it had a marzipan filling, traditional German Christmas bakes such as Stollen was also not something I would choose.

Only after moving to the UK did I slowly start enjoying pastries such as mince pies. I suppose after many years living in the UK one can't really escape having one of these every few years.





YOU WILL NEED
  • mincemeat, store-bought or homemade

  • digestive cookies or similar, make sure they are vegan.

  • desiccated coconut

  • flaked almonds

  • dark chocolate for coating, make sure it is vegan

  • and cinnamon for dusting (optional)


I used a store-bought mincemeat which in my opinion is way too sweet, which is why I used a bitter dark chocolate to balance out the flavours. If your mincemeat is very sweet I recommend using a dark chocolate.


Digestive cookies are used to help bind the truffles and adds that "pastry" flavour and texture to the mixture.



REALLY EASY TO MAKE
  • All you need to do is crush the digestives into really small pieces and roughly chop the flaked almonds.

  • Mix the above with the mincemeat and coconut, to make a sticky mixture.

  • Using your hands scoop out some of the mixture and roll into even bite size balls and pop in the fridge for 30min. It will be a bit sticky, but that is okay.

  • Melt the chocolate and dip and coat each ball.

  • Let the chocolate set (I recommend placing them back in the fridge) and dust with ground cinnamon before serving.

  • Store them in the fridge.

MINCE PIE TRUFFLES


Delightful Christmas bites made with mincemeat, desiccated coconut flakes, crushed digestive biscuits, flaked almonds, coated in dark chocolate and dusted with cinnamon.


Makes 15 - 20 (depending on sizes of the bites)

Time 15min, plus time in the fridge



INGREDIENTS
  • 250g mincemeat, store-bought or homemade

  • 55g digestive biscuits (about 5 biscuits), make sure they are vegan

  • 2 tbsp desiccated coconut

  • 40g flaked almonds, roughly chopped

  • 120g dark chocolate, I recommend using 70% cacao or higher

  • cinnamon for dusting (optional)


INSTRUCTIONS
  1. Using a pin roller crush the Digestive biscuits into tiny pieces. They should not be too big.

  2. Add the mincemeat, crushed biscuits, coconut and chopped almond flakes into a mixing bowl and mix until evenly combined.

  3. Scoop out a heaped tablespoon of the mixture into your hands and roll them into even bite size balls. Repeat until all the mixture is done. It will be a bit of a sticky mess, but that is okay.

  4. Place the balls in the fridge for 30min or more to set a bit.

  5. Melt the chocolate, either in the microwave or on the stove top in a glass bowl over a steaming pot. Make sure to not get any water into the chocolate as the chocolate will go grainy.

  6. Dip and coat each ball in the melted chocolate and place them on a tray or plate to allow the chocolate to set and harden. (I recommend placing them back in the fridge for a few minutes)

  7. To finish dust with ground cinnamon.
