Mini Chocolate Vegan Pancakes

Vegan chocolate pancake cereal, served with maple syrup, chopped hazelnuts and fresh berries.
Perfect for weekend brunches.
CHOCOLATY CEREAL
As a child, my mom would occasionally by a box of Kellogg's Chocos. It was a real treat. If you are not familiar with them, they are little chocolate shell shaped cereals, crunchy when eating dry and slightly chewy when soaked in milk. I used to love them.
Even though these pancakes are not really like Chocos (except maybe the shape a little bit) they do somehow remind me of Chocos. When I saw the Chocos in the cereal isle this week, I knew I needed to make these chocolate pancake cereal again.
These mini chocolate pancakes are made with a healthy batter consisting of oats, banana, cacao powder, almond milk and baking powder. Simple.
No added sugar, these are definitely a much better option that sugary store-bought cereal.
WHAT IS PANCAKE CEREAL?
If you are not familiar, it's literally bite-size pancakes. So cute, so fun.
Pancake cereal was a big food trend a few years ago. I am not sure why have never posted a recipe, so it is about time. If you have tried and made them you will understand why these were such a big trend.
SERVING SUGGESTIONS
I love a drizzle of maple syrup or date syrup and chopped nuts, fresh berries or banana slices. You can however also drizzle with a bit of nut butter or tahini or sprinkle with chocolate chips to make them extra indulgent.
Add a dollop of yoghurt or enjoy with milk of choice.
TO MAKE THESE YOU WILL NEED
rolled oats or oat flour, gluten-free if needed
a small ripe banana
cacao powder, preferably organic
vanilla extract
a pinch of salt, to balance the flavours
and baking powder
EASY TO MAKE
Add all the ingredients into a high-speed blender and blend until smooth. OR you can use oat flour, mash the banana and mix everything together in a bowl.
Use a teaspoon full of batter per pancake. Fry on both sides and enjoy with your favourite toppings.

Time: 20 minutes
INGREDIENTS
FOR THE PANCAKES
30g rolled oats or oat flour, gluten-free if needed
1 small banana (about 40g)
75ml unsweetened almond milk, or milk of choice
1/2 tsp vanilla extract
1 tbsp cacao powder
1/2 tsp baking powder
a pinch of sea salt (optional)
TO FRY AND SERVE
coconut oil for frying,
maple syrup, honey or date syrup to serve
chopped hazelnuts
fresh blueberries or black berries to serve
INSTRUCTIONS
Add all the ingredients into a high-speed blender and blend until smooth. If you don't have a high-speed blender see above for another option.
Heat a pan, add a bit of coconut oil to the pan, unless you are using a non-stick pan.
Add teaspoons full of batter to the hot pan to make mini pancakes. Use the back of the spoon to make to create the round shapes if needed.
Fry for a few minutes on both sides. Repeat until all the batter is done.
Serve with a drizzle of maple syrup, chopped hazelnuts and fresh berries.
