Peanut Butter Oatmeal Cookies

Healthy, simply flapjack style cookies, full of peanut butter flavour. Add chocolate chips or dip the baked cookies in dark chocolate to take them to the next level.
HEALTHY TREAT
These are made with only a few wholesome ingredients, which you most likely already have in your pantry.
Thanks to the natural oils in the peanut butter, no added oil or butter is need.
This recipe is flourless and can easily be gluten-free by using a gluten-free certified oats.
No sugar is added to these cookies as they are naturally sweetened with bananas.
HOW TO GET THE ROUND COOKIE SHAPE
I used a cookie cutter to create the shape. Simply place the cookie cutter onto the prepared baking sheet. Spoon in the mixture and gently press down the dough evenly.
Carefully remove the cookie cutter and voila....
Or shape them with your hands for a more rustic finish.
HOW TO STORE THESE
They should keep for about 3 - 4 days in an airtight container.
THE INGREDIENTS
OATS
I use old fashioned rolled oats to make these. I have not tried using quick oats though. If you do make these with quick oats, leave me a comment below.
PEANUT BUTTER
I recommend using a 100% peanut butter, without any added oils or sugars. Make sure to use an unsalted peanut butter.
BANANA
Not only does the banana add natural sweetness, it also acts as a binder.
DATE OR MAPLE SYRUP (OPTIONAL)
Adding either of them adds a caramel flavour to the cookies.
VANILLA EXTRACT (OPTIONAL)
This adds more flavour to the cookies
CHOPPED NUTS (OPTIONAL)
For added crunch (and you know how much I love crunch) add roughly chopped peanuts or even chopped walnuts for extra flavour and crunch.

By adding chocolate chips or cover the baked cookies in dark chocolate. SO GOOD!!

PEANUT BUTTER OATMEAL COOKIES

Makes about 16 cookies
Time: about 30 min
INGREDIENTS
220g rolled oats
120g peanut butter
2 medium bananas, mashed
1 - 2 tbsp date syrup (optional)
pinch of salt
1/2 tsp vanilla extract
50g chopped walnuts (optional)
OPTIONAL
Dark chocolate chips
INSTRUCTIONS
Preheat the oven to 175C and prepare a baking sheet.
Mash the bananas, add the rest of the ingredients and mix until well combined. Add the chocolate chips if using.
Form and shape about 16 cookies out of the dough.
Place them on a prepared baking sheet and bake for 15 min.
Remove from the oven and let them cool for about 10 minutes before removing them from the baking tray.
OPTIONAL
If you are covering the cookies in dark chocolate, simply melt the chocolate over hot water or in the microwave and cover the cooled cookies with the chocolate.
