Perfect Summer Salad

I absolutely love the spring and summer time in the UK!
Here in Bath where we live, everything looks postcard ready and makes Bath feel even more romantic!
Picnics in the parks... ice cream in the back garden overlooking the Avon river... Sundowners in Alexandra Park with a view over Bath.... walking the skyline at 8pm as the sun is still out...
When the sun is out, everyone seems to be in a really good mood and life is good.
We love salads, especially in summer and have been experimenting with different combinations and this is one we keep going back too.
This fabulously fresh, healthy and delicious salad is perfect as a lunch or light dinner.
THIS SALAD IS MADE WITH
Lettuce
Kale
Fresh herbs
Peas
Smoked tofu strips (or plain tofu)
Courgette/ Zucchini / Baby marrow
Green Apple
Avocado
Pumpkin seeds
and a tangy, creamy dressing!
WHY YOU WILL LOVE THIS SALAD
It has:
crunch from the apple and seeds
sweetness from the peas and apples
smokiness from the tofu (if using smoked tofu)
creaminess from the avocado and the cashew dressing
Freshness from the lettuces, fresh herbs and courgette
sourness from the capers and lemon juice
A well balanced combination..... what is not to love.
THE PERFECT SUMMER SALAD
A light, refreshing and well-balanced salad, perfect for summer.
Serves: 3 - 4 people
Time to make : 20 - 25 min
INGREDIENTS
FOR THE SALAD
1 apple, cored and sliced
1 avocado, sliced
150g peas, fresh or frozen (defrosted)
3 handfuls of kale
1 small head curly lettuce
1 small courgette, spiralized
4 tbsp pumpkin seeds
200g smoked tofu
Sesame oil for frying
2 - 3 tbsp soy sauce
FOR THE DRESSING
1 tbsp capers
1/2 cup cashews, soaked for about 10 minutes in hot water
1 tbsp lemon juice
1 tsp whole grain or Dijon mustard
Salt and pepper to taste
1 clove crushed garlic
1/3 cup filtered water or more for a thinner consistency
INSTRUCTIONS
Add the kale to a large salad bowl, drizzle with a bit of olive oil and massage for a few minutes to break down the leaves.
Cut the tofu into strips and fry on medium heat in a bit of sesame oil. Drizzle the tofu with about 1 tbsp soy sauce whilst its frying. Once golden on one side, flip and fry the other side until golden.
Remove from the heat and set aside.
Next, make the dressing by adding all the ingredients for the dressing in a high speed blender until smooth.
Add more water if you prefer a runnier consistency.
Add the remaining salad ingredients and the fried tofu to the salad bowl and drizzle with the dressing.
Serve immediately. Enjoy!
