Plum & Orange Compote with Overnight Oats

Tangy and sweet, combined with a creamy overnight oat, this makes a delicious hot or cold breakfast.
What do you do if you have too many seasonal plums that need to be used up? Why not make this delicious plum & orange compote.
This compote takes only 10 minutes and 3 ingredients to make. You simply cook the plums with orange juice and maple syrup until they start to break down.
Super easy and so delicious!
This recipe is great as it can be enjoyed warm with a cooked oats or cold with an overnight oats.
WHAT IS A COMPOTE?
A compote is fruit that is cooked until it breaks down and gets a jam-like texture.
Enjoy the compote hot or cooled.
OTHER WAYS TO ENJOY THE COMPOTE
plain yoghurt
ice cream
on waffles
cooked oats
chia pudding
or on toast with cashew cream cheese
OTHER FLAVOUR OPTIONS
cook the compote with a bit of ground cinnamon and/ or star anise
swap the orange juice for lemon juice, it will however affect the overall taste and you might want to add more maple syrup or other sweetener.
if you don't have maple syrup you can use agave syrup, sugar or honey (unless avoiding).

INGREDIENTS
FOR THE COMPOTE
4 ripe plums
juice and zest from ½ orange
1 - 2 tbsp maple syrup
INSTRUCTIONS
FOR THE COMPOTE
Wash the plums and cut them into small pieces but leave the skin on.
In a small sauce bring the plums and orange juice to boil. Reduce the heat and cook until the fruit starts to break down and can be mashed with a fork. Stir occasionally.
Remove from the heat and stir in a tablespoon of maple syrup.
Let it cool or serve it warm.
Store leftovers in sealed container in the refrigerator.
ORANGE OVERNIGHT OATS
Serves 2
Time: 5 min, plus overnight soaking
INGREDIENTS
FOR THE OVERNIGHT OATS
80g rolled oats (gluten-free if needed)
140ml almond milk (or milk of choice) or too your liking
1 tbsp chia seeds
juice from ½ orange (I used a blood orange)
1 tbsp plain plant-based or natural yoghurt
pinch of salt
for sweetness: 1 mashed banana or 1 tbsp maple syrup
to serve: plum & orange compote, fresh orange segments (optional), nut-butter, granola or your favourite toppings
INSTRUCTIONS
FOR THE OVERNIGHT OATS
Mix the oats, almond milk, chia seeds, orange juice, yoghurt and salt and let it sit overnight in the refrigerator.
In the morning add a mashed banana or maple syrup and more almond milk if required.
Divide the oats between two bowls and serve with the compote, fresh orange segments (optional) and your favourite toppings. Enjoy!
