red pepper hummus


This hummus made with roasted sweet red peppers is a wonderful flavour alternative to the traditional hummus. It has an added sweetness and smokiness from roasted red peppers. Perfect for dipping or spreading on fresh bread or sourdough toast.


Really easy to make, delicious and so much better than store-bought.




If I had to choose only 5 foods I could have for the rest of your life, hummus would most definitely be on my list.

Homemade hummus to be precise. Whether traditional or beetroot or this roasted red pepper, that would be the tough decision to make.


If you’ve seen my original hummus recipe then you know that making hummus from scratch is really easy. This red pepper hummus recipe is simple too.



WHAT IS THIS HUMMUS MADE FROM
  • chickpeas, I used canned but you can use home cooked chickpeas

  • roasted sweet red bell pepper, you can roast the pepper yourself or use jarred

  • a good quality tahini

  • fresh lemon juice

  • fresh garlic

  • sea salt and black pepper to taste

  • extra virgin olive oil

  • smoked paprika (optional)



JARRED OR FRESH?

You can use jarred pepper in this recipe or roast the peppers yourself.

Jarred roasted peppers often have vinegar added. If the ones you are using have added vinegar, you might have to adjust the seasoning in this recipe. I would recommend not adding all the lemon juice straight fro the beginning. Once the rest of the ingredients have been blended, taste and add lemon juice as needed.


To roast the peppers yourself, simply cut the peppers in half, deseed and grill (skin side up) in the oven until the skin is charred. Let the peppers cool before removing the skin from the pepper.





BEST WAYS TO ENJOY THIS HUMMUS
  • make a wrap with roasted vegetables and red pepper hummus

  • as a spread on a sandwich

  • as a dip for raw vegetables such as carrots and cucumbers

  • add a generous dollop to your nourish bowl, such as this nourish bowl

  • make a pasta sauce by adding a bit of the pasta cooking water to thin it out

  • as a side to a salad and fresh bread

  • spread or add dollops on homemade pizza.

ROASTED RED PEPPER HUMMUS

Serves: 4 - 6

Time: 10 min



INGREDIENTS
  • 1 can 400g chickpeas, about 240g drained

  • 2 red bell pepper, roasted or jarred peppers

  • 3 tbsp tahini

  • juice from 1/2 lemon, or to taste (adjust if using jarred peppers in vinegar)

  • 1 - 2 fresh garlic, crushed

  • sea salt and black pepper to taste

  • 2 - 3 tbsp water

  • 2 tbsp extra virgin olive oil (or more water), plus more to drizzle on the hummus before serving

  • 1/2 tsp smoked paprika (optional)


INSTRUCTIONS
  1. To roast the peppers (if using fresh bell peppers) simply cut the pepper in half, deseed and grill (skin side up) in the oven until the skin is charred. Let the peppers cool before removing the skin from the pepper.

  2. To make the hummus add the chickpeas, tahini, garlic, smoked paprika (if using) and lemon juice to a high-speed blender or food processor.

  3. Blend into a paste, scraping down the sides as needed. Add the water and olive oil and blend until smooth.

  4. Taste and season as needed. Add more water/ olive oil for a runnier consistency.

  5. Transfer the mixture into a bowl, drizzle with olive oil, a bit more tahini (optional) and black pepper.
