Secret Ingredient Chocolate Pudding

A rich, creamy, chocolate pudding. Healthier and vegan-friendly, made using a secret ingredient: Sweet potato!


Serve this to anyone who is not aware of this recipe, and I am sure they will not realise this is made with sweet potato. And that it is vegan!


This is perfect for anyone who has a sweet tooth, but wants to cut down on processed sugars and unhealthy sweet treats.



Sweet potato chocolate pudding


SECRET INGREDIENT

Sweet potato! Orange sweet potato, to be exact. They are naturally sweet and rich and creamy when blended until smooth.

I have not made this with the white sweet potato, but I know the taste will be different. If you do want to use the white sweet potato you will need to adjust some of the ingredients such as amount of cacao and sweetener.


IMPORTANT!

Make sure the sweet potato is cooked thoroughly and to blend the mixture until completely smooth and fluffy - you don't want any chunky bits.



HOW TO COOK THE SWEET POTATO

There are two ways to cook the sweet potato:

Peel and dice the sweet potato. Steam it until completely cooked and soft.

Alternatively you can cook the sweet potato in the oven: peel and dice the sweet potato. Add to small baking tray, add a splash of water (not oil), cover with aluminium foil and cook until soft and tender.


Make sure to cool the sweet potato completely before using in this recipe.



REASONS WHY THEY ARE GOOD

Orange sweet potato are nutrient-dense, high in antioxidants and high in fiber.

They support good vision and your immune system.



REFIND SUGAR FREE

Let's talk about the sweetener in this recipe - Maple syrup.

Although maple syrup is high in sugar, it does contain some nutrients and antioxidants which makes it somewhat healthier that processed sugars.

Make sure to use a pure maple syrup and not a maple flavoured syrup.

Always remember, moderation is key.

TO SERVE

  • with a dollop of vanilla yoghurt. To make simply mix 1 heaped tablespoons unsweetened plain yoghurt with 1/2 tsp vanilla extract.

  • with fresh berries such as blueberries or strawberries

  • with chocolate shavings or cacao nibs

  • add some chopped nuts on top

  • or sprinkle with a few cookie crumbs.

Just remember depending what you serve it with, it might increase the overall sugar amount which will make it less healthier.



LIGHT BUT FILLING

Although the pudding, if blended long enough, will be surprisingly fluffy it will certainly make you feel fuller than the traditional chocolate puddings.


The portions in this recipe might be small, but this is due to the fact that it is filling.

If you want bigger portions I recommend doubling this recipe.

SECRET INGRIEDENT CHOCOLATE PUDDING

Time: 10 minutes (excluding cooking time of the sweet potato)

Serves: 2 small or 1 generous portion




INGREDIENTS

  • 150g orange sweet potato , cooked and cooled

  • 50g almond milk or milk of choice

  • 30g cacao powder

  • 2 tbsp maple syrup, or more to taste

  • 1/2 tsp vanilla paste

  • a tiny pinch of salt



INSTRUCTIONS

  1. Add the cooked sweet potato and almond milk into a high speed blender and blend for 1 or 2 minutes.

  2. Add the rest of the ingredients and blend until completely smooth.

  3. Depending on your blender this could take about 3 or 4 minutes - make sure there are NO lumpy bits.

  4. Taste and adjust as needed. If the pudding is too thick add a bit more almond milk and blend again.

  5. Transfer into serving bowls and finish with toppings of your choice.
